摩卡月饼 不用碱水和转化糖浆 简单零失败 Mocha Mooncakes
这是日式的桃山月饼。比起传统的月饼相对低油,少糖,少粉和更健康。它的口感细腻爽口,吃多不腻口。我是很喜欢喝咖啡的人,所以这次把它做成自己喜欢的摩卡口味,没想到小孩也喜欢。咖啡粉是无咖啡因的,所以小孩也可以放心的吃。
Mooncake skin 月饼皮:
1)White bean paste 白芸豆馅 – 120g
2)All purpose flour 中筋面粉 – 18g
3)Butter 牛油 – 5g
4)Cocoa powder 可可粉 – 1/2 tsp
White bean paste filling 白芸豆馅 – 70g
Mocha filling 摩卡馅:
1)White bean paste 白芸豆馅 – 135g
2)Cocoa powder 可可粉 – 1 tsp
3)Coffee powder 咖啡粉 – 1/2 tsp
*I use 50g mooncake mould. The skin : filling ratio is 4:6, which means 20g of skin and 30g of filling. You can also use the skin: fillings ratio 5:5.
*我用50g的月饼模。皮馅的比例是 4:6,也就是20g 的皮和30g 的馅。你也可以用5:5 的比例, 25g的皮和25g的馅。
*Always use low heat to bake this type of mooncakes to prevent cracking. As most of the ingredients are basically cooked, and the flour consumed is very little, thus 15 mins of baking should be more enough to bake the mooncakes thoroughly.
*桃山月饼要用低温烘烤,不然会裂开。材料基本上都是熟的,面粉的用量也很少,所以烤15分钟就可以了
*The mooncake skin can be used for the flower mooncakes (piped mooncakes). Some people use lotus paste instead of white bean paste. The result is very eye catching.
*近年来很夯的裱花月饼用的就是桃山皮,也有些人用莲蓉馅代替白芸豆馅做月饼皮。你可以用天然蔬果粉调色。低温,短时间烘烤的缘故,烤出来的颜色非常漂亮。
