入秋了,来杯热可可起司蛋糕 Hot Cocoa Cheesecakes | Mini Chocolate Cheesecakes
迷你巧克力起司蛋糕,做成小小个的方便取拿。没用水浴法烘烤的关系,蛋糕冷却后会有凹陷。我顺势把它们做成热可可的造型,好让外形单调的巧克力起司蛋糕变得更可爱。
蛋糕的甜度适中,口感细腻顺滑,很适合当派对或餐后甜点。
(A) 饼底材料:
1)Oreo 饼干 – 100g(去馅的重量)
2)融化牛油 – 40g
(B) 巧克力起司材料:
1)奶油奶酪 – 300g
2)白糖 – 40g
3)盐 – 1/4 tsp
4)酸奶油 – 70g
5)黑巧克力豆 – 120g
6)蛋 – 2个
(C) 装饰 – 巧克力手把,鲜奶油,可可粉和迷你棉花糖。
*可做12个迷你巧克力起司蛋糕。食谱中的黑巧克力豆可以用巧克力砖或巧克力纽扣代替。
*烤好的乳酪蛋糕有时会有少许的裂痕,但冷却后表面会微微下陷,裂痕就会不明显。
*制作乳酪蛋糕时,搅拌到均匀即可,不要过度搅拌特别是搅打鸡蛋时;全程低/中低速;不要烤过头;也不要一直开烤箱。拌入太多空气和高低温交错等都是导致乳酪蛋糕‘裂很大’的原因。

(A) Ingredients for crust:
1)Oreo Cookies– 100g(without cream)
2)Melted Butter – 40g
(B) Fillings:
1)Cream Cheese – 300g
2)Sugar – 40g
3)Salt – 1/4 tsp
4)Sour Cream – 70g
5)Dark Chocolate Chips – 120g
6)Eggs – 2
(C) Decorations – Chocolate handle, whipped cream, cocoa powder and mini marshmallow.
*Make 12 mini chocolate cheesecakes. You can replace the dark chocolate chips with chocolate baking bar or chocolate button.
*Sometimes the mini cheesecake will crack slightly. When they cool and sink slightly in the middle, the crack wouldn’t be obvious.
*Use low/medium low speed to beat the batter. Beat until just combined, don’t over mix especially when mixing the egg with batter. Avoid opening the oven door while the cheesecake is baking inside. Incorporate too much air or sudden changes in temperature often cause cracking.
