[Ingredients]
| A - Cocoa sponge
A - Flour: 50g
A - Cocoa powder: 10g
Granulated sugar: 60g
A - egg size L: 2
B - unsalted butter: 10g
B - Salad oil: 10g
B - Milk: 10g
1. Set a cookie sheet in a 15cm mold.
2. Mix A together and sieve.
3. Melt B in a pan of hot water.
Beat the whole egg with granulated sugar at high speed until warm.
5. Mix in the flour with a rubber spatula.
6. Add a little of the whisked egg mixture to B and mix it all together.
Preheat the oven to 170°C and bake for 30 minutes.
8. Turn the sponge upside down.
9. Slice it in 10mm pieces.
[Chocolate cream]
Fresh cream 35%: 80g
Fresh cream 47%: 80g
Granulated sugar: 12g
A - Sweet chocolate 56%: 40g
A - Milk: 20ml
1. Prepare ice water. Blend the cream, add the granulated sugar and whip until thickened.
For the ganache, warm the chocolate slightly in the microwave, add the milk, microwave again, and mix thoroughly.
Put the ganache in the cream and mix immediately to adjust the consistency. (If the consistency is like the one in the video, it will not harden strongly in the refrigerator and will stay soft forever.
