手鞠造型月饼教学 附芝士奶黄馅 Temari Shaped Mooncakes With Cheese Custard Filling
被和果子影响,做了这个手鞠造型的月饼。用的是桃山皮配方,低温短时间烘烤的缘故,烤前和烤后的颜色基本上变化不大,所以成品非常漂亮。手鞠是日本传统球状的绒线玩具,有好运和幸福的象征。现在很多寿司,吊饰品甚至和果子的造型也都取自这个工艺玩具- 手鞠。
芝士奶黄馅材料:
1)蛋 – 1 颗
2)白糖 – 40g
3)鲜奶 – 40g
4)鲜奶油 – 40g
5)低筋面粉 – 20g
6)玉米粉 – 15g
7)牛油 – 20g
8)熟的咸蛋黄 – 2颗
9)帕玛森芝士粉 – 15g
月饼皮材料:
1)白豆沙 – 220g
2)中筋面粉 – 30g
3)牛油 – 5g
4)天然色粉
5)芝士奶黄馅 – 25g X 10份
*做10个手毯月饼。每个月饼的重量是50g, 皮和馅各占25g。不想做造型的也可以用50g的月饼模压模。
*组装月饼时可以用手指在接缝处轻轻抹过好让两种颜色的饼皮可以合拢,然后再用手掌把月饼轻轻按压。

Ingredients for Cheese Custard Filling:
1)Egg – 1
2)Sugar – 40g
3)Milk – 40g
4)Whipping Cream – 40g
5)Cake Flour – 20g
6)Corn Flour – 15g
7)Butter – 20g
8)Cooked Salted Egg Yolk – 2
9)Parmesan Cheese Powder – 15g
Ingredients for mooncake skin:
1)White bean paste – 220g
2)All purpose flour – 30g
3)Butter – 5g
4)Natural food color powder
5)Cheese custard filling – 25g X 10 portions
*Make 10 mooncakes, 50g each. Skin and fillings are 25g each. You can also use the 50g mooncakes mold to shape the mooncakes.
*When assembling the mooncakes, use your finger to gently wipe the seam between the different color dough to smooth it out, then ‘press’ the mooncake in the palm of your hand gently and roll it in order to stick the dough together.
