Ingredients:
=TWO 9" INCH PIE CRUST=
a) 2 1/2 cups All Purpose Flour
b) 1 tsp Kosher Salt
c) 1 tsp Granulated Sugar
d) 1 cup (227g) Cold Unsalted Butter (Cubed)
e) 2Tbsp to 1/2 cup Cold Ice Water
f) Optional: Egg White (brush on crust surface)
=PUMPKIN FILLINGS=
a) 15oz (425g) Pure Pumpkin Puree

b) 3/4 cup Light Brown Sugar
c) 1 Tbsp Corn Starch
d) 1/2 tsp Kosher Salt
e) 3/4 tsp Ground Ginger
f) 3/4 tsp Ground Cinnamon
g) 1/4 tsp Ground Nutmeg
h) 3 Large Eggs (one at a time)
i) 1 tsp Vanilla Extract
j) 12oz (340g/ 355ml) Evaporated Milk
=WHIPPED CREAM TOPPINGS=
a) 1 cup (240ml) Whipping Cream
b) 3 Tbsp Icing Sugar
c) 1/2 tsp Vanilla Extract
