COOKER WALA MUTTON PULAO
Preparation time 15 minutes
Cooking time 40-45 minutes
Serving 4

Ingredients
For Marinating Mutton
600 gm Mutton, (with bone) , मटन
2 tbsp Oil , तेल
1 tsp Degi red chilli powder , देगी लाल मिर्च पाउडर
Salt to taste , नमक स्वादानुसार
2 Dry Red chillies, broken in half , सूखी लाल मिर्च
2-3 fresh Green chillies, broken in half , हरी मिर्च
1 medium Onion, roughly chopped , प्याज

For Curd Mixture
1 cup Curd , दही
1 tbsp Ginger-Garlic paste , अदरक लहसुन का पेस्ट
1 tbsp Coriander powder , धनिया पाउडर
¼ tsp Turmeric powder , हल्दी पाउडर
½ tsp Degi red chilli powder , देगी लाल मिर्च पाउडर
1 heaped tbsp Fried onion , बरिस्ता
Few Mint leaves , पुदीने के पत्ते

For Mutton Pulao
1 heaped tbsp Ghee , घी
2 inch Cinnamon stick , दालचीनी
10-12 Black pepper cons , काली मिर्च के दाने
1 Black cardamom , बड़ी इलायची
Marinated Mutton , मैरिनेटेड मटन
Curd Mixture , दही का मिश्रण
Water , पानी
1 tbsp Fried onion , बरिस्ता
Few Mint leaves , पुदीने के पत्ते
Salt to taste , नमक स्वादानुसार
600 gm Basmati rice , soaked बासमती चावल

For Garnish
Fresh Mint leaves पुदीने के पत्ते

Process
For Marinating Mutton
In a bowl add mutton, oil, degi red chilli powder, salt, dry red chillies, green chillies, onion and mix everything properly and keep aside for at least 30-60 minutes.

For Curd Mixture
In a bowl add curd, ginger-garlic paste, coriander powder, turmeric powder, degi red chilli powder, fried onions, mint leaves and mix everything properly and keep aside for further use.

For Mutton Pulao
In a cooker heat ghee and add cinnamon stick, black cardamom, black pepper cons, marinated mutton and saute on medium heat until the mutton is light brown.
Now add the curd mixture and saute until fragrant or until the ghee starts coming up, then add water and close the lid then give it 3-5 whistles or until 80% cooked.
Let the cooker cool down then remove the lid and add water, fried onion, mint leaves, salt then bring it to a boil.
Once boiled add basmati rice, mix it once, now again close the lid and give it 2-3 whistles.
Switch off the flames and let the cooker cool down, remove the lid and let the rice set of 5-10 and then serve hot in a serving plate and garnish with mint leaves.
