Luncheon meat also known as spam is cooked meat sold in tins. They are not the healthiest food around but they are really convenient to be used in cooking. We grew up eating luncheon meat and we love the taste of it. In fact, it is one of our favourite comfort foods. If you cannot take pork, you can opt for chicken luncheon meat instead. Cooking fried rice is really easy, especially when you have a lot of leftover rice because you cooked too much of it. If you are craving for some fried rice but you don't have leftover rice available, simply cook a pot of rice as per normal then remove them from the pot and let them air dry for a few hours before using them to cook fried rice. Luncheon meat fried rice or spam fried rice is perfect when you only have spam, eggs and rice as well as some seasonings.

Ingredients:
3 - 4 pax

220g / 7.8oz luncheon meat (spam) - cut into bite-sized pieces
5 eggs (beaten)
4 bowls of cooked rice (cooked using 2 rice cups or 306g/10.8oz of raw jasmine rice)
220g / 7.8oz round cabbage (cut into strips)
2 tablespoons light soy sauce
2 tablespoons oyster sauce
2 tablespoons premium dark soy sauce
A few dashes of white pepper
2 stalks of spring onion (chopped)
