Ingredients
Makes about 16 truffles:

9 oz (250 g) Mascarpone cheese, chilled
6 oz (160 g) Italian Savoiardi Cookies (Ladyfingers cookies)
1/3 cup (50 g) Powdered Sugar
3 tablespoons (20 g) Espresso Coffee (unsweetened)
Nutella for the filling
Unsweetened Cocoa Powder for coating

Directions:

Make Espresso Coffee and cool it down.

In a big size bowl, soften chilled Mascarpone using a spatula; add powdered sugar and mix until combine. Add the cooled Espresso coffee and mix just until combined. Refrigerate until prepare the cookies mix.

Place Savoiardi (Ladyfingers cookies) in a food processor and crush until fine crumbs form.
Add the crushed cookies in the mascarpone mix and mix until combined.
Freeze for 15 minutes.

Take a small amount of the mixture, roll it with your hands to form about 1 inch (3 cm) ball, slightly flatten, make a hole in the center and add about ½ teaspoon of Nutella in it; close the ball (add some extra cookies mix to close it well) and roll with your hands to form a ball.

Roll into cocoa powder for topping.
Refrigerate for at least 2 hours before serving.

You can prepare the truffles days before, store in plastic box in refrigerator and remove from the fridge 10-15 minutes before serving.
