๐Ÿ‘จโ€๐Ÿณ [Spicy and Sour Octopus Salad] 2-3 servings
- Ingredients : Octopus 300g, a third of onion, a handful of watercress (40g), 1 cheongyang chili pepper, a half red chili pepper, a third of carrot, a half tbsp of salt, 1 tbsp of Korean rice wine
- Ingredients for seasoning blend: 2 tbsp of Korean chili paste (Gochujang), 1 tbsp of chili pepper powder, 1 tbsp of green plum extract, 1 tbsp of sugar, 3 tbsp of vinegar, a half tbsp of minced garlic, a half tbsp of sesame oil, a dash of sesame seeds
1. Julienne the onion. And cut the watercress and carrot into 5cm strips. Cut the chili peppers diagonally.
2. Add the seasoning ingredients in the bowl.
3. Add the salt and rice wine to the boiling water, and boil the octopus for 10 seconds.
Cool it down in ice water, and then drain on a draining tray.
(Tip. The texture of the octopus becomes fresher and chewy in ice water.)
4. Place all the octopus, vegetables, and seasoning blend in a big bowl. And toss them together.
5. Serve it on a plate, and sprinkle some sesame seeds atop before you enjoy it.
