This salad is a twist on the beef Thai salad version using spicy fried chicken. The chicken is coated in coriander and ginger then cooked in coconut oil. The salad is a crisp fresh Thai salad using Thai sauces for the dressing. A simple meal to make, quite healthy and taste delicious. A great lunch you can have all year round.
