Steam fried Bun生煎包,让人垂涎欲滴的上海生煎包。生煎包褶子这面朝上摆放或褶子这面冲下,底儿冲上摆放都可以。我每次做都是焦脆的底、松软的皮、鲜香的馅,家人非常喜欢,有时也会用其他的馅料来做,都非常好。面团最好是半发面,掌握好加多少水量和用多大的火来煎是成功的关键,我都有详细讲解。
我用的料可以做24-30个生煎包 (或按自己喜欢的大小做)

面团 (DOUGH):
中筋面粉450克 All-purpose flour 450 g
酵母3克 yeast 3 g 1 tsp
白糖7克 (选项) white sugar 7 g 1/2 tbsp
盐 1.5克 salt 1.5 g 1/4 tsp
泡打粉2克 baking powder 2 g 1/2 tsp
食用油 7毫升 cooking oil 7 ml 1/2 tbsp


馅料(Filling):
韭菜150克 garlic chives 150 g
虾 100克 shrimps 100 g
猪肉馅 300克 ground pork 300 g
鸡蛋一个 egg 1 / 55 g +-
生抽 7毫升 regular soy sauce 7 ml 1/2 tbsp
老抽 5毫升 dark soy sauce 5 ml 1 tsp
蚝油 7毫升 oyster sauce 7 ml 1/2 tbsp
花椒粉 0.5克 pepper powder 0.5 g 1/4 tsp
盐 7克 salt 7 g / 1 tsp
炒菜油 15毫升 cooking oil 15 ml 1 tbsp
芝麻油(香油)15毫升 sesame oil 15 ml 1 tbsp

黑芝麻适量 black sesame seeds as needed
葱花 chopped green onion as needed

平底不粘锅,直径30厘米 non-stick fry pan 30 cm diameter
热水 (50℃) 150毫升 hot water (50℃) 150 ml
