CHICKEN DO PYAZA
Preparation time 10 minutes
Cooking time 30-35 minutes
Serve 2

Ingredients
For Ginger Garlic Paste
1 inch Ginger, slice, अदरक
2-4 Garlic cloves, लहसुन
2-3 Green chillies (less spicy) हरी मिर्च
Salt to taste, नमक स्वादअनुसार

For Marination
1 kg Chicken, (Drumstick, thigh) चिकन
Salt to taste, नमक स्वादअनुसार
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
1 tsp Prepared Ginger Garlic paste, अदरक लहसुन का पेस्ट
2 tbsp Curd, beaten, दही

For Chicken Do Pyaza
2-4 tbsp Ghee, घी
2 tbsp Oil, तेल
1 tsp Cumin seeds, जीरा
2 Green cardamom, हरी इलायची
2-4 Cloves, लॉन्ग
5-6 Black peppercorns, काली मिर्च के दाने
3 medium sized Onions, chopped, प्याज
1 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
½ cup fresh Tomato puree, ताज़े टमाटर की प्यूरी
1 tbsp Ghee, घी
2 heaped tbsp Coriander powder, धनिया पाउडर
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ cup Curd, beaten, दही
Marinated Chicken, मैरिनेटेड चिकन
little Water, पानी
2 medium sized Onions, dice, प्याज
1 medium size Capsicum, dice, शिमलामिर्च
1 medium size Tomato, dice, टमाटर
¼ tsp Kewra water, केवड़ा
2 tbsp Coriander leaves, chopped, धनिया पत्ता
1 tsp Lemon juice, नींबू का रस

For Garnish
Coriander sprig, धनिया पत्ता

Process
For Ginger Garlic Paste
In a mortar pestle, add ginger, garlic, green chillies and grind it into a rough paste and keep aside for further use.

For Marination
In a bowl, add chicken, salt to taste, degi red chilli powder, turmeric powder, ginger garlic paste.
Add curd and marinated well. Keep it for 10-15 minutes.

For Chicken Do Pyaza
In a deep handi or pot, add ghee, oil once it's hot, add cumin seeds, green cardamom, and cloves.
Add black peppercorns and let it splutter well. Add onions and saute until translucent.
Add ginger garlic paste and saute it for 4-5 minutes on medium flame.
Add tomato puree and keep sauteing on medium flame. Add ghee mix well.
Add coriander powder, degi red chilli powder, curd and mix it well.
Add marinated chicken mix well. Cover it with the lid and let it cook for 6-10 minutes.
Add water and cover it with the lid and cook for 5-7 minutes.
Add onion, capsicum, tomato mix well, cover it with the lid and cook for a few minutes on low flame.
Finish it with kewra water, coriander leaves. Switch off the flame.
Transfer it into a serving dish, garnish it with coriander sprig and serve hot with roti.

COOKER WALA MUTTON PULAO
Preparation time 15 minutes
Cooking time 40-45 minutes
Serving 4

Ingredients
For Marinating Mutton
600 gm Mutton, (with bone) , मटन
2 tbsp Oil , तेल
1 tsp Degi red chilli powder , देगी लाल मिर्च पाउडर
Salt to taste , नमक स्वादानुसार
2 Dry Red chillies, broken in half , सूखी लाल मिर्च
2-3 fresh Green chillies, broken in half , हरी मिर्च
1 medium Onion, roughly chopped , प्याज

For Curd Mixture
1 cup Curd , दही
1 tbsp Ginger-Garlic paste , अदरक लहसुन का पेस्ट
1 tbsp Coriander powder , धनिया पाउडर
¼ tsp Turmeric powder , हल्दी पाउडर
½ tsp Degi red chilli powder , देगी लाल मिर्च पाउडर
1 heaped tbsp Fried onion , बरिस्ता
Few Mint leaves , पुदीने के पत्ते

For Mutton Pulao
1 heaped tbsp Ghee , घी
2 inch Cinnamon stick , दालचीनी
10-12 Black pepper cons , काली मिर्च के दाने
1 Black cardamom , बड़ी इलायची
Marinated Mutton , मैरिनेटेड मटन
Curd Mixture , दही का मिश्रण
Water , पानी
1 tbsp Fried onion , बरिस्ता
Few Mint leaves , पुदीने के पत्ते
Salt to taste , नमक स्वादानुसार
600 gm Basmati rice , soaked बासमती चावल

For Garnish
Fresh Mint leaves पुदीने के पत्ते

Process
For Marinating Mutton
In a bowl add mutton, oil, degi red chilli powder, salt, dry red chillies, green chillies, onion and mix everything properly and keep aside for at least 30-60 minutes.

For Curd Mixture
In a bowl add curd, ginger-garlic paste, coriander powder, turmeric powder, degi red chilli powder, fried onions, mint leaves and mix everything properly and keep aside for further use.

For Mutton Pulao
In a cooker heat ghee and add cinnamon stick, black cardamom, black pepper cons, marinated mutton and saute on medium heat until the mutton is light brown.
Now add the curd mixture and saute until fragrant or until the ghee starts coming up, then add water and close the lid then give it 3-5 whistles or until 80% cooked.
Let the cooker cool down then remove the lid and add water, fried onion, mint leaves, salt then bring it to a boil.
Once boiled add basmati rice, mix it once, now again close the lid and give it 2-3 whistles.
Switch off the flames and let the cooker cool down, remove the lid and let the rice set of 5-10 and then serve hot in a serving plate and garnish with mint leaves.

FISH PAKODA ROLL
Preparation time : 20-25 minutes
Cooking time : 15-20 minutes
Servings : 2

Ingredients
For Marinating Fish
1 medium Fish Fillet - cut in fingers (मछली)
½ medium Lemon Juice (नींबू का रस)
Salt to taste (नमक स्वादानुसार)
½ tsp Ginger-Garlic Juice (अदरक लहसुन का रस)

For Batter
½ tsp Carom Seeds (अजवाइन)
½ tsp Dried Fenugreek Leaves (कसूरी मेथी)
2 tbsp Coriander Leaves - chopped (धनिया पत्ता)
1 tsp Ginger-Garlic Paste (अदरक लहसुन का पेस्ट)
1 cup Gram Flour (बेसन)
½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
½ tsp Turmeric Powder (हल्दी पाउडर)
Salt to taste (नमक स्वादानुसार)
1 tbsp Mustard Oil (सरसों का तेल)
Water as required (आवश्यकतानुसार पानी)
½ cup Refined Flour for coating (मैदा)
Oil for frying (तेल तलने के लिए)

For Roti Dough
3-4 tbsp Gram Flour (बेसन)
½ tsp Ginger-Garlic Paste (अदरक लहसुन का पेस्ट)
Salt to taste (नमक स्वादानुसार)
1-2 drops Mustard Oil (सरसों का तेल)
1 cup Refined Flour (मैदा)
½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
½ tsp Turmeric Powder (हल्दी पाउडर)
2 heaped tbsp Curd (दही)
1 tsp Ghee (घी)

For Fresh Salad
1 medium Tomato - sliced (टमाटर)
1 medium Onion - sliced (प्याज)
1 fresh Green chilli - chopped (हरी मिर्च)
A few Mint leaves - roughly torn (पुदीने के पत्ते)
Salt to taste (नमक स्वादानुसार)
A pinch roasted Carom seeds (अजवाइन)

For Green Chutney
1 cup Mint leaves (पुदीने के पत्ते)
½ cup Coriander leaves (धनिया पत्ता)
½ inch Ginger (अदरक)
½ medium Onion - roughly chopped (प्याज)
½ small Lemon juice (नींबू का रस)
2-3 fresh Green chillies (हरी मिर्च)
Salt to taste (नमक स्वादानुसार)

Other Ingredients
1 tbsp Mayonnaise (मेयोनेज़)
For Garnish
Fresh Coriander leaves (धनिया पत्ता)
Lemon slices (नींबू)
A pinch Degi red chilli powder (देगी लाल मिर्च पाउडर)

Process
For Marinating Fish
In a bowl add fish, salt, lemon juice, ginger-garlic juice and mix properly and set aside for 10-15 minutes.

For Batter
In a bowl add carom seeds, dried fenugreek leaves, coriander leaves, ginger-garlic paste, gram flour, mustard oil, degi red chilli powder, turmeric powder, salt, water and mix properly until coating consistency.
Keep aside for further use.

For Roti Dough
In a bowl add gram flour, ginger-garlic paste, salt to taste, mustard oil, refined flour, degi red chilli powder, turmeric powder, curd and knead it properly until q semi soft dough.
Now add some ghee and knead once again, keep aside for further use.

For Fresh Salad
In a bowl add sliced tomatoes, onion, green chillies, mint leaves, salt, lemon juice and mix it properly and keep aside for further use.

For Green Chutney
In a grinder jar and mint leaves, coriander leaves, ginger, onion, lemon juice, green chillies, salt and grind it into a fine paste and keep aside for further use.

For Assembling Amritsari Fish Roll
Firstly coat the marinated fish with flour and then coat it with batter then deep fry in medium hot oil until light golden and half cooked, remove and keep aside.
Now take a small portion of the dough and roll it thin using a rolling pin in a small roti, and in a similar way roll the rest of the roti's.
Roast these roti's on a hot flat pan and apply some ghee cook until golden brown and crispy.

Before serving flash fry the fish pakoda in hot oil until golden brown and crispy.

Now for serving amritsari fish roll, on a roti spread mayonnaise, then place fish pakoda, some fresh salad, then some green chutney and at last garnish with coriander leaves, lemon slices, degi red chilli powder and serve immediately.

EGG CHILLI
Preparation time: 15 minutes
Cooking time: 25-30 minutes

Ingredients
For Cooking Egg
6-8 whole Egg, अंडे
1 tsp Soy sauce, सोया सॉस
1 tsp Chilli sauce, चिली सॉस
2 tbsp Spring onion, chopped, प्याज़ पत्ता
1 tbsp Oil, तेल

For Sauce Mixture
1.5 tbsp Soy sauce, सोया सॉस
1 tbsp Green chilli sauce, ग्रीन चिली सॉस
1 tsp Vinegar, सिरका
1 tbsp Red chilli sauce, रेड चिली सॉस
½ tsp Sugar, चीनी
1/2 cup water

Other Ingredients For Egg Chilli
2 tbsp Oil, तेल
2-3 Red chilli, chopped, रेड चिली
1 inch Ginger, chopped, अदरक
1 cup medium Red & Green bell pepper, cube, रेड और ग्रीन बैल पेपर
1 medium Onion, cube, प्याज़
Prepared Egg cubes, तैयार किये हुए अंडे के क्यूब
Prepared sauce mixture, तैयार किये हुए सॉस का मिश्रण
Water, पानी
2 tbsp Cornstarch slurry, कॉर्न स्टार्च का लिजाम
2 whole Spring onion, cut into diagonally, प्याज़ पत्ता
1 tbsp Chilli oil or Sesame oil, चिल्ली ऑइल या तिल का तेल

For Garnish
Sesame seeds, तिल
Fresh Coriander leaves, धनिया पत्ता

Process
For Cooking Egg
In a bowl add eggs, soy sauce, chilli sauce, spring onion, oil and mix everything properly.
Grease the pan with oil, pour the egg mixture in the pan and cover it with another hot pan then cook it for 8-10 minutes or until the mixture is cooked completely.
Remove and let it cool down a bit, cut it into cubes and keep aside for future use.

For Sauce Mixture
In a bowl, add soy sauce, green chilli sauce, vinegar, red chilli sauce and sugar mix it well. Keep aside for future use.

Other Ingredients For Egg Chilli
Heat oil in a wok, add ginger, red chilli, onion and saute it well.
Add red and green bell peppers and toss everything well for a minute on high heat.
Now add prepared egg cubes and give it a toss.
Add sauce mixture, little water, cornstarch slurry and mix it well until thicken.
Add spring onion, chilli oil and give it a final toss and garnish it with sesame seeds, coriander leaves and serve hot.

MATAR PANEER
Preparation time 10 minutes

For Fried Paneer
200 gm Paneer, cubes , पनीर
Oil for frying, तेल तलने के लिए
Water , पानी

For Gravy
2 tbsp Ghee , घी
1 Bayleaf / तेजपत्ता ( optional )
2-3 cloves and 1 cardamom (optional )
1 tsp Cumin seeds , जीरा
1 medium Onion, chopped , प्याज
1 fresh Green chilli, chopped , हरी मिर्च
2 tsp Ginger-Garlic paste , अदरक लहसुन का पेस्ट
½ tsp Turmeric powder , हल्दी पाउडर
11/2 tsp Degi red chilli powder , देगी लाल मिर्च पाउडर
2 tsp Coriander powder , धनिया पाउडर
1½ cups fresh Tomato puree , ताज़े टमाटर की प्यूरी
Salt to taste , नमक स्वादानुसार
1 cup Green peas, (precooked if fresh not in season ) , हरे मटर
Fried Paneer , तला हुआ पनीर

For Garnish
Fresh Coriander leaves ,‌ ताजा धनिया पत्ता

Process
For Fried Paneer
Add cubes of paneer into the hot oil and fry them until golden brown.
Once golden brown, remove and put it in a bowl of water and let them cool down and keep aside for further use.

For Gravy
In a kadai heat ghee and add cloves, cumin seeds let them crackle then add onion and saute until translucent.
Now add green chilli, ginger-garlic paste, and saute for a minute.
Then add turmeric powder, degi red chilli powder, coriander powder and saute until the onions are properly cooked and spices are fragrant.
At this time add the fresh tomato puree, salt and saute until it's cooked or the ghee starts coming from sides.
Then add the green peas, fried paneer without water and saute for 1-2 minutes.
Now add some water and boil it for 5-6 minutes until a semi thick gravy.
Switch off the flames and serve hot in a serving bowl and garnish with coriander leaves.

TAWA PULAO
Preparation Time: 15 minutes
Cooking Time: 20 minutes
Serves: 4

Ingredients:-
For Red Chilli Paste
6-7 whole red Kashmiri chillies, soaked
4-5 garlic cloves
1 tsp cumin seeds

For Tava Pulav:-
2 tbsp butter
1 tbsp oil
1 tsp cumin seeds
1 medium onions, sliced
1 tbsp ginger garlic paste
¼ cup red chilli paste (See the recipe above)
1 cup shredded cabbage
¼ cup green capsicum, sliced
1 medium tomato, sliced
½ cup potatoes, cut in cubes, boiled
¼ cup French beans, cut in cubes, blanched
Salt to taste
¼ cup green peas, boiled
2 cups cooked rice
½ tbsp lime juice
2 tbsp butter
1 tbsp Pav bhaji masala

Garnish:-
1 tomato, sliced for garnish
Fresh Coriander leaves for garnish
Lemon wedges

Serve With:-
Roasted Papad
Tomato Raita

Process:-
• Add soaked red chillies, garlic cloves and cumin seeds to a blender, blend to a smooth paste and set aside till in use.
• Heat butter and oil in a pan, add cumin seeds and allow to splutter.
• Add the sliced onions and sauté till translucent.
• Add ginger garlic paste and sauté till fragrant.
• Add the prepared red chilli paste, mix well and cook for a few minutes.
• Add cabbage, mix well and cook for 3-4 minutes.
• Add green capsicum, tomato, potatoes and French beans, mix well and cook for 5-6 minutes.
• Add salt and mix well. Add the green peas, mix well and cook for 2-3 minutes.
• Add the cooked rice and toss well. Add lemon juice, butter and Pav bhaji masala, mix well and cook for 1-2 minutes.
• Garnish with sliced tomatoes, coriander leaves and lemon wedges.
• Serve hot with tomato raita and papad.

Tip: Use leftover rice for better texture.

MATAR KULCHA RECIPE
Preparation time 10 minutes & Overnight soaking
Cooking time 35-40 minutes
Serving 4

Ingredients
For Dough Starter
1 tsp Dry Yeast , खमीर
1 cup Water , पानी
1 tbsp Sugar , चीनी
1 cup Refined flour , मैदा

For Kulcha Dough
Prepared Dough Starter , तैयार किया हुआ खमीर
1 cup Refined flour/ or as needed for a soft dough , मैदा
1 tbsp Curd , दही
¼ tsp Salt , नमक
1 tbsp Ghee , घी

(Ingredients for Kulcha without yeast)
2 cup maida
1 level tsp baking powder
1/2 tsp baking soda
1 1/2 tsp sugar
1/2 tsp salt
1/2 cup dahi
Water as needed for a soft dough

Other Ingredients for Kulcha
1 tsp Onion seeds , कलौंजी
1 tsp Dry fenugreek leaves , कसूरी मेथी
1 tbsp Ghee , घी

For Boiling White Peas
2 cups Soaked White Peas, सफेद मटर
1 Bay leaf , तेजपत्ता
½ tsp Turmeric powder , हल्दी पाउडर
Water , पानी

For White Peas Mixture
Boiled White Peas , सफेद मटर
Salt to taste, नमक स्वादानुसार
2 tbsp Tamarind & Dry mango water (with soaked dry mango petals इमली और सूखा आम का पानी
1 medium Onion, chopped , प्याज
2 inch Ginger, chopped , अदरक
2-3 fresh Green chillies, chopped , हरी मिर्च
4 tbsp Coriander leaves, chopped , धनिया पत्ता
1 medium Tomato, chopped , टमाटर
A pinch Roasted Cumin powder , जीरा पाउडर
A pinch Degi red chilli powder , देगी लाल मिर्च पाउडर

Process
For Dough Starter
In a big bowl add dry yeast, water sugar, refined flour and mix everything properly, cover and keep aside in a warm place to ferment overnight.

For Kulcha Dough
The next morning in the dough starter add refined flour, curd, salt, and mix everything knead a soft loose dough.
Now add ghee and knead once again, give it a round shape, cover and keep aside in a warm place for second fermentation.
Once it's fermented, remove the excess air from the dough and make equal portions of it.
Roll it in an elongated oval shape using a rolling pin then stick or sprinkle some onion seeds, dry fenugreek leaves.
Heat a flat pan and place the rolled dough on it and sprinkle some water on the side and cover it and let it cook for a minute or so.
Now remove the cover and cook it from the other side also.
Apply some ghee on both sides and cook until golden brown and crispy on both sides.
Remove and keep aside.

For Boiling White Peas
In a big pot add soaked white peas, water, bay leaf, turmeric powder, cover and cook for 20-25 or until soft.
Now remove it on a tray and keep aside to cool down completely.

For White Peas Mixture
In a bowl add the cooled white peas, salt, tamarind & dry mango water, onion, ginger, green chillies, coriander leaves, tomato and mix everything properly.
Remove it in a serving bowl and garnish it with onion, ginger, green chillies, tomato, a pinch of roasted cumin powder, degi red chilli powder and coriander leaves.
Serving it with hot kulcha.

On high public demand, here's a popular recipe, my version of Pahadi Chicken Tikka Kebab. No Tandoor, no oven. Try it this weekend for a great match-time munch.

CHICKEN PAHADI TIKKA/KEBAB
Preparation time 15 minutes
Cooking time 20-25 minutes
Serving 4

Ingredients
For Marinating Chicken
500 gm Chicken (boneless), cubes , चिकन
Salt to taste , नमक स्वादानुसार
1 tbsp Ginger-Garlic-Green chilli paste , अदरक लहसुन हरी मिर्च का पेस्ट
½ medium Lemon juice , नींबू का रस

For Green paste
1 small bunch Coriander leaves , धनिया पत्ता
½ small bunch Mint leaves, plucked , पुदीने के पत्ते
2-3 fresh Green chillies , हरी मिर्च
1 tbsp Dried Fenugreek leaves , कसूरी मेथी
1 heaped tbsp Oil , तेल
Salt to taste , नमक स्वादानुसार

For Second Marination
Prepared green paste , तैयार की हुई हरि पेस्ट
1 cup Hung Curd , टंगा हुआ दही
1 tbsp Mustard oil , सरसों का तेल
Salt to taste , नमक स्वादानुसार
½ tbsp Ginger-Garlic-Green chilli paste , अदरक लहसुन हरी मिर्च का पेस्ट
½ tsp Cardamom powder , इलायची पाउडर
½ tsp Carom seeds , अजवाइन

Other Ingredients
¾ cup Second Marination , सेकंड मेरीनेशन
Chicken , चिकन
1 tbsp Roasted Gram flour , भुने चने का बेसन
1 tbsp Mustard oil , सरसों का तेल
2 tbsp Oil for frying , तेल तलने के लिए
A pinch Chaat masala , चाट मसाला
A sprinkle of Black pepper powder , काली मिर्च का पाउडर

Process
For Marinating Chicken
In a bowl add chicken, salt, ginger-garlic-green chilli paste, lemon juice and mix everything properly and keep aside at least for 15-20 minutes.
After 15-20 minutes, take the marinated chicken and squeeze out the excess water from the chicken and keep aside for further use.

For Green paste
In a grinder jar add coriander leaves, mint leaves, dried fenugreek leaves, green chillies, salt, oil and grind it into a fine paste and keep aside for further use.

For Second Marination
In a bowl add prepared green paste, hung curd, mustard oil, salt, ginger-garlic-green chilli paste, cardamom powder, carom seeds and mix it properly.
Now add the squeezed chicken mix it properly ensuring that it coat's everything and keep it aside for 10-15 minutes.

For Cooking Chicken Pahadi Kabab/Tikki
After 10-15 minutes, add roasted gram flour, mustard oil, mix it properly.
Now put this marinated chicken on the skewers and cook on a hot grill pan with some oil and cook from both sides until golden brown & cooked.
Remove and serve hot and sprinkle some chaat masala, black pepper powder and garnish with coriander leaves and lemon wedges.

DAL DHOKLI
Preparation time : 15 minutes

Ingredients
For Dal
1 cup Tuvar Dal - soaked (तूर दाल)
1 heaped tbsp Ghee (घी)
Salt to taste (नमक स्वादानुसार)
½ tsp Turmeric Powder (हल्दी पाउडर)
¼ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
1 Bay Leaf (तेज पत्ता)
2-3 Kokum (कोकम)
1 tbsp Jaggery (गुड़)

For Dhokli
1 cup Whole Wheat Flour (गेहूँ का आटा)
1 tbsp Gram Flour (बेसन)
½ tsp Turmeric Powder (हल्दी पाउडर)
½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
¼ tsp Asafoetida (हींग)
Salt to taste (नमक स्वादानुसार)
1 tbsp Oil (तेल)
Water (पानी)

For Tempering
2 tbsp Ghee (घी)
1 tsp Mustard Seeds (सरसों के बीज)
¼ tsp Fenugreek Seeds (मेथी दाना)
1 sprig Curry Leaves (कड़ी पत्ता)
5-6 Dry Red Chillies (सुखी लाल मिर्च)
2 Cloves (लॉन्ग)
1 inch Cinnamon Stick (दालचीनी)
¼ tsp Asafoetida (हींग)
½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)

For Fried Peanut
3 tbsp Peanut (मूंगफली)
2 tbsp Ghee (घी)

Process
For Dal
In a Kadhi add tuvar dal, ghee, salt, turmeric powder, degi red chilli powder, bay leaf and mix everything properly.
Now cover and cook it on medium heat for 20-25 minutes or until soft.
Now add the cut roti and add kokum, jaggery, let it boil for 8-10 minutes.
Now pour the tempering on it and boil it for a minute. Serve hot.

For Dhokli
In a whole wheat flour, gram flour, turmeric powder, degi red chilli powder, asafoetida, salt, oil, water and knead a soft dough and keep aside for 5-10 minutes.
After resting, take a small portion of the dough and roll it into a roti and half cook it on a flat pan.
And then cut it in diamond shape and keep aside for further use.

For Tempering
In a pan add ghee , mustard seeds, fenugreek seeds, curry leaves, dry red chilli, cloves, cinnamon stick, asafoetida, degi red chilli powder and sauté it for a minute.

For Fried Peanut
In a pan add ghee peanuts and fry until light golden brown and then add it in the dal.

4 medium size Onion, chopped, प्याज

1 tsp Guntur red chilli powder, गुंटूर लाल मिर्च पाउडर
4 medium size Tomato, chopped, टमाटर
2 Green chilli, chopped, हरी मिर्च
Little water, पानी
Prepared Masala, तैयार किया हुआ मसाला
1 sprig Curry leaves, करी पत्ते
Fried Paneer, तला हुआ पनीर
1 tbsp Coriander leaves, chopped, धनिया पत्ता

For Paneer Marination
400 gms Paneer, cubed, पनीर

Process
For Ginger Garlic Paste
In a mortar pestle, add ginger, garlic, green chilli, salt to taste and make a smooth paste out of it.

For Masala
In a non-stick pan, add fennel seeds, cumin seeds, cinnamon stick, cloves, dry roast on medium flame.
Transfer it into a bowl, add salt to taste once it cools down, grind it into a fine powder.

For Paneer Masala
In a deep bottom pan, add oil, ghee once it is hot, add star anise, curry leaves, cumin seeds and let it splutter well.
Add prepared ginger garlic paste and saute it on medium flame until light brown in color.
Add onion and saute it well. Add coriander powder, guntur red chilli powder and keep sauteing until the spices turn aromatic.
Add tomato, green chilli and saute it well until tomatoes turn soft.
Add little water and cook on medium flame for 5 minutes.
Add prepared masala, curry leaves and mix it well.
Add fried paneer and mix everything well. Simmer it for 5 minutes.
Add coriander leaves and mix it well.
Garnish it with fried curry leaves and serve hot with roti.

For Paneer Marination
In a bowl, add paneer, a pinch of asafoetida, turmeric powder, a pinch of degi red chilli powder, oil and marinate well.
Heat oil in a non-stick pan, add marinated paneer and fry for a minute to make sure all the sides are cooked well.

LITTI CHOKHA
Preparation time 10-15 minutes
Cooking time 25-30 minutes
Serving 2-4

Ingredients
For Dough
1 ½ cup Whole wheat flour, गेहूं का आटा
⅓ cup Broken wheat, fine powder, दलिया
Salt to taste, नमक स्वादानुसार
Water, पानी
1 tbsp Oil, तेल

For Stuffing
½ cup Sattu, सत्तू
1 medium Onion, chopped, प्याज
2-3 Green chilli, chopped, हरी मिर्च
1 inch Ginger, chopped, अदरक
2-3 Garlic cloves, chopped, लहसुन
2 tbsp Coriander leaves, chopped, धनिया पत्ता
Salt to taste, नमक स्वादानुसार
1 tbsp Mustard oil, सरसों का तेल
1 tbsp Pickle masala, अचार का मसाला

For Choka
1 Eggplant, roast, बैंगन
2-4 Garlic cloves, लहसुन
4 medium Tomato, roast, टमाटर
2 medium Potato, roast, आलू
½ inch Ginger, chopped, अदरक
2-3 Garlic cloves, chopped, लहसुन
2 Green chilli, chopped, हरी मिर्च
1 tbsp Coriander leaves, chopped, धनिया पत्ता
Salt to taste, नमक स्वादानुसार
1 ½ tbsp Mustard oil, सरसों का तेल

Other Ingredients
1 cup Ghee, घी

For Garnish
Coriander leaves, धनिया पत्ता

Process
For Dough
In a parat, add whole wheat flour, broken wheat, salt to taste and water, knead a smooth soft dough.
Apply some oil and knead it properly once again.
Cover it with damp cloth and keep it aside for future use.

For Stuffing
In a parat, add sattu, onion, green chilli, ginger, garlic, green chilli, salt to taste, mustard oil and pickle masala.
Mix everything well. Keep aside for future use.

For Stuffing & shaping Litti
Now, make small or medium sized balls from the dough.
Sprinkling some flour, roll each dough ball to a circle of about 5 to 6 inches.
Place a big spoonful of the stuffing in the center.
Pleat and then join the edges. Press the joined part and lightly roll the stuffed dough balls in your palms, so as to get a round shape. Keep aside.
Another method is to flatten the dough ball with your palms and make a shallow cup.
Now, add the stuffing and roll it in a round shape.
Keep the prepared littis under a cotton towel or napkin, so that the dough does not dry out.
Onces the cow dung cake is semi hot, place the prepared litti in them and let them roast until cooked through and through.
Remove on a cloth and dust of the cow dung cake dust off it.
Then soaked the warm littis in ghee for 5 minutes and served with prepared choka.

For Choka
Take the eggplant, add 2- 3 slit and place a clove of garlic in each one.
Now place the eggplant, tomatoes, potatoes on burning hot cow dung cakes and roast them until soft and cooked properly.
Remove and let it cool down a little then peele the veggies and chop them roughly.
Add them in a bowl and add chopped coriander leaves, ginger, garlic, green chilli, salt to taste, mustard oil and mix everything properly with hand or masher. Choka is ready to serve.

Note
Use coarse flour.
Add roasted potato to add thickness in the choka
Use cow dung cakes whenever possible or add 1 tsp baking soda in the dough if cooking in the oven.
Use pickles of good quality and taste.
Use a good quantity of ghee for soaking litti.

For Boiling Soya Nuggets
3-4 cups Water , पानी
½ tsp Sugar , चीनी
½ inch Ginger, chopped , अदरक
1 tsp Soy sauce , सोया सॉस
1 fresh Green chilli, slit in half , हरी मिर्च
1½ cups Soya Nuggets , सोया नगेट्स

For Frying Soya Nuggets
Boiled Soya Nuggets , उबले हुए सोया नगेट्स
2 tbsp Corn-starch , कॉर्न स्टार्च
Oil for frying , तलने के लिए तेल

For Sauces Mixture
3 tbsp Soy sauce , सोया सॉस
1 tsp Vinegar , सिरका
1 tsp Sugar , चीनी
1 tbsp Tomato ketchup , टाॅमेटो केचप
1 tbsp Red chilli sauce , रेड चिली सॉस

For Tempering
2 tbsp Oil , तेल
1-2 fresh Green chillies, chopped , हरी मिर्च
2 cloves Garlic, chopped , लहसुन
1 inch Ginger, chopped , अदरक
1 medium Onion, diced , प्याज
1 medium Capsicum, diced , शिमला मिर्च
Sauce mixture , सॉस का मिश्रण
Water , पानी
½ tsp Black pepper powder , काली मिर्च का पाउडर
4-5 tbsp Corn-starch slurry , कॉर्न स्टार्च का लीजाम
Fried Soya Nuggets , तले हुए सोया नगेट्स
Few Coriander leaves, roughly tron , धनिया पत्ता
1 whole Spring onion, cut in 1 inch pieces , प्याज पत्ता

For Garnish
Fresh Coriander leaves , धनिया पत्ता

Process
For Boiling Soya Nuggets
In a deep pan, add water once it starts boiling add sugar, ginger, soy sauce.
Add green chilli, soya nuggets and boil for 4-5 minutes.
Until the water is completely soaked.

For Frying Soya Nuggets
In a bowl, add cornstarch, soaked soya nuggets and mix it well.
Heat oil in a kadai, add soya nuggets and fry until it turns crisp from all the sides.
Remove in an absorbent paper and keep it aside.

For Sauce Mixture
In a bowl, add soy sauce, vinegar, sugar, tomato ketchup, red chilli sauce mix it well.

For Tempering
In a wok, add oil, once it's hot add green chilli, garlic, ginger and saute it well.
Add onion, capsicum and saute on high flame till it slightly changes color.
Add sauce mixture, water, black pepper powder.
Add cornstarch slurry and mix until the gravy slightly thickens and turns glossy.
Add fried soya nuggets and toss everything well.
Add coriander leaves, spring onion and toss it well.
Garnish it with coriander leaves and serve hot

2 Pomfret (cleaned & slit) पापलेट

For Spice Water
¼ cup Water, पानी
½ tsp Turmeric powder, हल्दी पाउडर
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 tsp Coriander powder, धनिया पाउडर

For Onion Tomato Masala
1 ½ tbsp Coconut oil, नारियल का तेल
½ inch Ginger, chopped, अदरक
2-3 Garlic cloves, chopped, लहसुन
1 Green chilli (less spicy) chopped, हरी मिर्च
2 sprig Curry leaves, कड़ी पत्ता
⅓ cup Shallots, slice, छोटे प्याज
2 medium Onion, chopped, प्याज
1 medium size Tomato, chopped, टमाटर
Salt to taste, नमक स्वादअनुसार
Prepared Spice Water
1 sprig Curry leaves, कड़ी पत्ता

For Assembling
Seared Fish, मछली
Prepared Onion Tomato Masala, तैयार किया हुआ प्याज टमाटर का मसाला

Other Ingredients
Banana leaf, केले का पत्ता

For Garnish
Fried Cashew Nut, तले हुए काजू
Coriander sprig, धनिया पत्ता
Onion, rings, प्याज
Green chilli, हरी मिर्च
Lemon, slice, नींबू

Process
For Marination
In a bowl, add lemon juice, ginger garlic paste, salt to taste, degi red chilli powder, turmeric powder, oil and mix well.
Marinate the fish for 10 minutes and set aside.
Or you can use an asahi kasei zipper bag and keep it in the refrigerator for 10 minutes.

For Spice Water
In a bowl, add water, turmeric powder, degi red chilli powder, coriander powder and mix well. Keep aside for further use.

For Onion Tomato Masala
In a shallow pan, add coconut oil once the oil is hot, add ginger, garlic, green chilli, curry leaves, onions and saute until translucent.
Add tomato, salt to taste and saute for 2-4 minutes.
Add spice water, curry leaves and mix well.
Once the masala is cooked, transfer it into a tray and keep aside for further use.

For cooking Fish
In the same pan, apply the asahi kasei frying pan foil and seared the marinated fish from both the sides for a few minutes.
Keep aside on a plate.
Run the banana leaf on fire for 2-3 seconds. The leaf would have become soft.
Take a big piece of wilted banana leaf and add in two tablespoons of the prepared masala in the center. Add a piece of seared fish and cover the fish with masala.
Fold the banana leaf to make a small pocket.
Place the prepared pocket on the same pan and cook for 5 minutes on a low flame, seam side down first.
Sprinkle little water and cook from both the sides.
Remove from heat and garnish it with fried cashew nut, coriander sprig, onion rings, lemon wedge and serve hot

For Mutton Marination
800 gms Mutton (with bones) मैरिनेटेड मटन
Salt to taste, नमक स्वादअनुसार
1 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 ½ heaped tbsp Coriander powder, धनिया पाउडर
1 heaped tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
2 tsp Fried Onion oil, तला हुआ प्याज का तेल

For Keema Marination
400 gms Mutton kheema, मटन खीमा
Salt to taste, नमक स्वादअनुसार
2-3 tbsp Curd, beaten, दही
2-3 Green chillies, chopped, हरी मिर्च
2-4 Garlic cloves, chopped, लहसुन
½ inch Ginger, chopped, अदरक
few Coriander stems, chopped, धनिया के डंठल
1 tbsp Coriander powder, धनिया पाउडर

For Ginger Garlic Paste
2 Green chilli, हरी मिर्च
4-5 Garlic cloves, लहसुन
½ inch Ginger, peeled, slice, अदरक
Salt to taste, नमक स्वादअनुसार

For Tempering
2 tbsp Ghee, घी
2 tbsp Fried Onion oil, तला हुआ प्याज का तेल
1 tsp Cumin seeds, जीरा
2 Black cardamom, बड़ी इलायची
2-4 Cloves, लॉन्ग
Prepared Ginger Garlic Paste, अदरक लहसुन का पेस्ट
4 medium size Onion, chopped प्याज
Marinated Mutton, मैरिनेटेड मटन
Marinated Keema, मैरिनेटेड मटन खीमा
1 cup Fresh Tomato puree, ताज़े टमाटर की प्यूरी
½ cup Mutton stock, मटन स्टॉक
1 tsp Prepared Masala, तैयार किया हुआ मसाला
A pinch of Nutmeg, grated, जायफल

For Masala
½ inch Cinnamon stick, दालचीनी
2-4 Cloves, लॉन्ग
6-7 Black peppercorns, काली मिर्च के दाने
2-4 Green cardamom, हरी इलायची
2-3 Bay leaf, तेजपत्ता
Salt to taste, नमक स्वादअनुसार

For Garnish
Coriander sprig, धनिया पत्ता

Process
For Mutton Marination
In a bowl, add mutton, salt to taste, ginger garlic paste, coriander powder.
Add degi red chili powder, turmeric powder, fried onion oil and mix everything well.
Keep aside for 5-10 minutes.

For Keema Marination
In a bowl, add mutton keema, salt to taste, curd, green chilies, garlic cloves, ginger.
Add coriander stems, coriander powder and marinate everything well.

For Ginger Garlic Paste
In a mortar pestle, add green chili, garlic cloves, ginger, salt to taste and make a smooth paste of it.

For Tempering
In a large sauce pot or handi, add ghee, fried onion oil, once it's hot, add cumin seeds.
Add black cardamom, cloves and let them crackle for a few seconds.
Add prepared ginger garlic paste and saute it well.
Add onion and saute until it's translucent or light pink in color.
Add marinated mutton and keep cooking on medium flame.
Cover it with the lid and let the mutton cook in its own juices for 5-6 minutes.
Add marinated keema and keep sauteing for 10 minutes.
Add tomato puree and mix it well. Cook on medium flame till releases its oil
Add mutton stock and mix it well and then cover it with a lid and cook on low flame for 10-15 minutes.
Add prepared masala, grate nutmeg and stir well.
Transfer into a serving bowl or plate. Garnish with coriander sprig and serve hot with paratha.

For Masala
In a pan, add cinnamon stick, cloves, black peppercorns, green cardamom, bay leaf.
Add salt to taste and dry roast on low flame until the spices turn aromatic.
Transfer it into a grinder jar and grind it into a fine powder. Keep it aside for further use.

VEGETABLES IN HOT GARLIC SAUCE
Preparation time : 15 minutes
Cooking time : 25-30 minutes
Servings : 2

Ingredients
2 tbsp Oil (तेल)
6-8 cloves Garlic - chopped (लहसुन)
2-3 Dry Red Chillies (सुखी लाल मिर्च)
½ medium Cauliflower - small florets (फूलगोभी)
1 medium Carrot - chopped (गाजर)
4-5 Mushroom - cut in 4 piece (मशरूम)
1 tsp Soya Sauce (सोया सॉस)
2 tbsp Red Chilli Sauce (रेड चिली सॉस)
Water (पानी)
Salt to taste (नमक स्वादानुसार)
¼ medium Red Bell Pepper - diced (रेड बेल पेपर)
¼ medium Yellow Bell Pepper - diced (यैलो बेल पेपर)
¼ medium Green Bell Pepper - diced (ग्रीन बेल पेपर)
1 medium Onion - diced (प्याज़)
4-5 French Beans - chopped (फ्रेंच बींस)
⅓ cup Corn-Starch Slurry (कॉर्न स्टार्च का लिजाम)

For Garnish
1 tsp Sesame Oil (तिल का तेल)
Fresh Spring Onion (प्याज़ पत्ता)

Process
In a wok heat oil and add garlic, saute it until light golden brown then add dry red chillies.
Now add the cauliflower, carrot, mushroom and saute for a minute.
Then add soya sauce, red chilli sauce and it with the vegetables for a minute.
Add water, salt and bring it to a boil and then add red bell pepper, yellow bell pepper, green bell pepper, onion, french beans and cook them all for 3-4 minutes.
Then add the corn-starch slurry and adjust the consistency.
Switch off the flames and serve hot in a serving bowl and garnish with sesame oil and spring onion.

CHICKEN MANCHURIAN
Preparation time 15 mins
Marinating time 45mins
Cooking time 25 mins
Serves 4

Ingredients for Marination
350 gms Chicken breast boneless
1 tsp Ginger garlic paste
Salt to taste
½ tsp White pepper
1 Egg
1 heaped tbsp Cornstarch
1 tbsp oil

Oil to deep fry

Ingredients for sauce
1 Red bell pepper diced
1 Green bell pepper diced
½ inch Ginger chopped
3 cloves Garlic chopped
2 tbsp Coriander chopped
2-3 nos Green chillies chopped

Oil 1 tbsp
1 tbsp Oyster sauce
½ tsp Soya sauce
4 tbsp Tomato ketchup
1 tsp black pepper
¼ cup water

Cornstarch slurry

Ingredients for Garnish
Spring onion chopped 1 tbsp
Coriander sprigs 5-6 nos

Method
1 for the marination , mix all ingredients other than oil and cornstarch and leave for 45 minutes
2 add oil and cornstarch to the chicken after 45 minutes and mix well , Fry on slow to medium heat till cooked from inside
3 dice and chop the veggies , keep aside
4 in hot oil add the chopped veggies , saute for a minute , add diced veggies and saute for another minute , add the sauces and cook for 2 minutes
5 add chicken , a little water and slurry till boil and remove
6 garnish with coriander and scallions and serve hot.

KHEER PAATHSHALA
Preparation time 15 minutes
Cooking time 35-40 minutes
Serving 4

Ingredients
For Kheer
50-60 gm Short grain rice (Kolum, Sona masuri), washed & soaked , चावल
1 ltr Milk , दूध
Few Vetiver roots , खस की जड़
100 gm Sugar , चीनी

For Garnish
Almond, sliced , बादाम

For Phirni
50 gm Short grain rice (Kolum, Sona masuri), washed & dried , चावल
1 ltr Milk , दूध
½ cup Milk , दूध
1 tsp Saffron , केसर
100 gm Sugar , चीनी

For Garnish
Pistachio, sliced , पिस्ता

For Gulatthi
1 cup cooked Rice , पके हुए चावल
½-¾ cup Water , पानी
¾-1 cup Milk , दूध
1 ltr Milk , दूध
2-3 Green cardamom, crushed , हरी इलायची
¾-1 cup Sugar , चीनी
2 tbsp Rose water , गुलाब जल

For Garnish
Dried Rose petals , सूखे हुए गुलाब की पंखुड़ियां

Process
For Kheer
In a kadai add milk bring it to a boil then add the washed & soaked rice.
Let it cook on medium heat for some time then add the vetiver roots in a muslin cloth and continue cooking until the rice has cooked properly.
Remove the roots from the kheer and add sugar in it, stir it properly and give it one last boil then switch off the flames.
Serve hot or cold and garnish with sliced almonds

For Phirni
Take the washed, soaked & dried rice and make a coarse powder.
Put this powder in a bowl add milk, saffron and mix it properly.
In a kadai heat milk then add the milk rice mixture and continue cooking on medium heat until the rice has cooked and the mixture has thickened.
Now add sugar and continue cooking for another 3-4 minutes and switch off the flames.
Serve hot or cold and garnish with sliced pistachio.

For Gulatthi
In a bowl add cooked rice, water and roughly mash the rice with ur hand then add milk and milk everything properly.
In a kadai heat milk and add the rice mixture, green cardamom and continue cooking on medium heat for 6-8 minutes
Now add sugar, rose water and cook for another 3-4 minutes, switch off the flames.
Serve hot or cold and garnish with dried Rose petals.

ALOO CHAAT
Preparation time: 10 minutes
Cooking time: 10-15 minutes
Serving: 4

Ingredients
For Chaat Masala
1 ½ tsp Black pepper cons , काली मिर्च
3 tsp Cumin seeds , जीरा
2 tsp Fennel seeds , सौंफ
¼ tsp Carom seeds , अजवाइन
1 tsp Coriander seeds , धनिया के बीज
Salt to taste , नमक स्वाद अनुसार
1 tsp Sugar , चीनी
1 ½ Dried mango powder, आमचूर
1 ½ tsp Red chilli powder , लाल मिर्च पाउडर

For frying potatoes
4-5 tbsp Oil , तेल
3-4 Potatoes, boiled, cube, आलू

For Chaat
1 medium Onion, finely chopped , प्याज
1 tsp Ginger, finely chopped , अदरक
2 tbsp Coriander leaves, chopped , धनिया के पत्ते
3-4 no. Green chili, chopped
1-2 tsp Lemon juice/ Tamarind water , नींबू का रस/ इमली का पानी

Process
For Chaat Masala
Heat a pan, add black peppercorns, cumin seeds, fennel seeds, carom seeds, coriander seeds dry roast them well.
Transfer it to a plate and let it cool down. Transfer the masala into the grinder, add salt to taste, sugar, dried mango powder, red chilli powder and grind it into a fine powder.
For frying potatoes
Heat oil in a deep pan, add boiled cube potatoes and fry until crisp and golden brown from all the sides.
Onces it's crisp, transfer it into a plate.
For Chaat
In a bowl, add fried potatoes, chopped onion, ginger, coriander leaves and lime juice and mix well.
Serve immediately.

CHEESE BURST PIZZA RECIPE
Preparation time 15 minutes
Cooking time 30-35 minutes
Serves 4

Ingredients
For Pizza Dough
1 ½ cup Refined flour , मैदा
½ tsp Baking powder , बेकिंग पाउडर
½ tsp Baking soda , बेकिंग सोडा
1 tsp Sugar , चीनी
Salt to taste , नमक स्वाद अनुसार
Water , पानी
½ cup Curd , दही
1 tsp Oil , तेल

For Cheese Burst Sauce/Spread
¼ cup Milk , दूध
½ tbsp Corn-starch , कॉर्न स्टार्च
1 cup Processed cheese , प्रोसेस चीज

For Pizza Toppings
1 small Onion, diced , प्याज
½ small Red bell pepper, diced , रेड बेल पेपर
½ small Green bell pepper, diced , ग्रीन बेल पेपर
¼ cup Corn kernels , भुट्टे के दाने
Salt to taste , नमक स्वादानुसार

For Assembling Pizza
1 tsp Olive oil , जैतून का तेल
2 tbsp Pizza sauce , पिज़्ज़ा सॉस / tomato ketchup
¼ cup Pizza Cheese , चीज

Process
For Pizza Dough
In a bowl add refined flour baking powder, baking soda, sugar, salt and mix once.
Now add water, curd and knead a soft dough, then add oil and knead it properly, cover and keep aside for further use.

For Cheese Burst Sauce/Spread
In a pan add milk, corn-starch, ½ of the cheese and mix it properly.
Now keep on the heat and melt the cheese properly and let it get thick.
Then add the remaining cheese and mix it properly until it all together, remove in a bowl and keep in the fridge to cool down.

For Pizza Toppings
In a bowl add diced onion, red bell pepper, green bell pepper, corn kernels, salt and mix everything properly and keep aside for further use.


For Assembling Pizza
Firstly take 2 equal portions of the dough and roll it thin using a rolling pin.
Now cook it on a flat pan from both sides and keep aside for further use.
After this make two more equal portions of dough and roll it thin using a rolling pin but this should be 1-2 inches bigger then the first roti's.
Now apply olive oil on a tray or plate and place the uncooked rolled dough properly on it.
Then spread the prepared cheese sauce on it but not on the sides.(leave 1-2 inches of the sides)
Place the smaller cooked roti on patt we're the cheese sauce is being spread and then fold left 1-2 inches of uncooked rolled dough on the cooked roti.
Now spread the pizza sauce on the cooked roti, add the toppings and then grate the pizza cheese on it, apply some olive oil on the uncooked sides.
Now place it in a preheated kadai or in an oven and bake until the cheese is melted and becomes little golden brown in colour.
Serve it warm.
NOTE:::: If you are using oven, then cook in preheated oven at 200*C for appx 15 minutes.

For PIZZA SAUCE
Preparation time 10 minutes
Cooking time 15-20 minutes

Ingredients
1 tbsp Oil, तेल
2-3 Garlic, Chopped, लहसुन
1 medium Onion, Chopped, प्याज
½ cup fresh Tomato Puree, टमाटर प्यूरी
½ tsp Sugar, चीनी
½ tsp Vinegar, सिरका
Salt to taste, नमक स्वादअनुसार
½ tsp Oregano , ऑरेगैनो
½ tsp Chilli flakes , चिल्ली फ़्लेक्स

Process
In the same pan heat oil, add chopped garlic, onion saute until the onions are translucent.
Add fresh tomato puree, sugar, vinegar, salt to taste and mix well.
Add oregano, chilli flakes mix well and remove most of the water from it and keep it aside.

TENDLI KI SABJI
Preparation time : 10 minutes
Cooking time : 20-25 minutes
Servings : 2
Ingredients
2 tbsp Oil (तेल)
½ tsp Mustard Seeds (सरसों के बीज)
½ tsp Cumin Seeds (जीरा)
1 inch Ginger - chopped (अदरक)
2-3 fresh Green Chillies - chopped (हरी मिर्च)
1 sprig Curry Leaves (कड़ी पत्ता)
2 heaped tbsp Peanuts (मूंगफली)
⅓ cup fresh Coconut - grated (ताजा कसा हुआ नारियल)
¼ tsp Asafoetida (हींग)
½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
½ tsp Turmeric Powder (हल्दी पाउडर)
¼ tsp Coriander Powder (धनिया पाउडर)
½ kg Ivy Gourd (Tendli) - sliced (टेंडली)
Salt to taste (नमक स्वादानुसार)
3 tbsp Coriander Leaves - chopped (धनिया पत्ता)
2 tbsp fresh Coconut - grated (ताजा कसा हुआ नारियल)
½ small Lemon Juice (नींबू का रस)
For Garnish
fresh Coriander Leaves (धनिया पत्ता)
fresh grated Coconut (ताजा कसा हुआ नारियल)
Process
In a kadai heat oil and add mustard seeds, cumin seeds, ginger, green chillies, curry leaves saute for half a minute.
Now add peanuts and saute for half a minute on medium heat and then add grated coconut and saute for a minute.
Then add the asafoetida, degi red chilli powder, turmeric powder, coriander powder and saute until fragrant.
Now add the ivy gourd (tendli), salt and mix everything properly then cover and cook for 5-7 minutes on medium heat.
Remove the lid and add coriander leaves, grated coconut, lemon juice and give it a final mix.
Serve hot in a serving plate and garnish with coriander leaves and fresh grated coconut.
