Resep Bakwan Sayur (untuk 4-5 porsi)

Bahan:
4 lembar kol
80 gr tauge
1-2 buah wortel, kupas
2-3 batang daun bawang
4 batang seledri
250 gr tepung terigu protein sedang
50 gr maizena
50 gr tepung beras
1 sdt baking powder, opsional
100 ml santan
2 sdt garam
1 sdm kaldu bubuk
1 sdm gula pasir
330 ml air

Bahan sambal kacang:
3 siung bawang putih, potong
3 siung bawang merah, potong
6 buah cabai merah keriting, potong
6 buah cabai rawit, potong
80 gr kacang goreng
3 lembar daun jeruk
500 ml air
1 sdm cuka
50 gr gula merah
1 sdt garam
1-2 sdm gula pasir
¼ sdt kaldu bubuk / penyedap

Langkah:
1. Panaskan sedikit minyak, tumis bawang putih, bawang merah, cabai keriting, dan cabai rawit hingga layu lalu masukkan daun jeruk, masak hingga sedikit kecokelatan
2. Blender kacang, air dan tumisan bawang hingga halus kemudian masak kembali
3. Tambahkan gula merah, cuka, garam, gula pasir, dan kaldu bubuk, masak hingga mendidih, sisihkan
4. Iris kol, daun bawang, seledri dan parut wortel lalu masukkan ke dalam wadah
5. Masukkan tauge, tepung terigu, tepung beras, maizena, baking powder, garam, kaldu bubuk, dan gula pasir, aduk hingga rata
6. Tambahkan santan dan air, aduk rata
7. Panaskan minyak, goreng bakwan hingga kuning keemasan
8. Bakwan siap disajikan dengan sambal kacang sebagai pelengkap

Indonesian Vegetable Fritters (Bakwan Sayur) Recipe (yield 4-5 servings)

Ingredients:
4 pc cabbage
80 g beansprouts
1-2 pc carrot, peeled
2-3 pc green onion
4 pc celery
250 g all-purpose flour
50 g cornstarch
50 g rice flour
1 tsp baking powder, optional
100 ml coconut milk
2 tsp salt
1 tbsp stock powder
1 tbsp sugar
330 ml water

Peanut Sambal ingredients:
3 clove garlic, sliced
3 pc shallot, sliced
6 pc red curly chili, sliced
6 pc Thai chili, sliced
80 g fried peanut
3 pc lime leaf
500 ml water
1 tbsp vinegar
50 g palm sugar
1 tsp salt
1-2 tbsp sugar
¼ tsp stock powder / flavor enhancer

Steps:
1. Heat some oil. Sauté the garlic, shallots, curly chili, and Thai chili until they wilt. Add lime leaf and cook until browned.
2. Blend the peanuts, water, and sautéed ingredients until smooth. Cook it again.
3. Add palm sugar, vinegar, salt, sugar, and stock powder. Bring to a boil and set aside.
4. Slice the cabbage, green onion, and celery. Shave the carrots and place in a bowl.
5. Add beansprouts, flour, rice flour, cornstarch, baking powder, salt, stock powder, and sugar. Mix well.
6. Add coconut milk and water. Mix well.
7. Heat the oil and fry the Fritters until golden brown.
8. Vegetable Fritters are ready to serve with Peanut Sambal on the side.
