【麻辣水煮鱼】刀口辣椒和新鲜的鱼,一个都不能少 Shuizhu Fish (Fish Filets in Hot Chili Oil)
【食材/Ingredients】
银花鲈鱼两条,每条一斤左右。也可以用一条较大的草鱼或者黑鱼
腌制鱼肉:盐1克,料酒3克,胡椒粉1克,蛋清1个,淀粉5克
腌制鱼骨:盐1克,料酒3克,淀粉5克
配菜:绿豆芽100克,莴笋叶子100克。也可以选用自己喜欢的蔬菜。
辅料:生姜10克,大蒜6瓣,新鲜小米椒3个,红泡椒(小米辣)3个,小葱1根,干辣椒8个,花椒或者青花椒20粒左右
配菜调味:白醋0.5克,料酒5克,盐0.5克
主材调味:豆瓣酱15克,糖1克,盐2克,开水适量
Fish: 1kg striped bass, or grass carp.
For marinating fish filet: salt 1g, cooking wine 3g, black pepper powder 1g, 1 egg white, potato starch 5g
For marinating fish bone: salt 1g, cooking wine 3g, potato starch 5g
Veggies: mung bean sprouts 100g, AA Choy 100g, or any vegetables you like
Spices: ginger 10g, garlic 6 cloves, 3 tabasco chilis, 3 pickled chilis, 1 scallion, 8 dry chilis, 20 sichuan pepper
Condiments for veggies: rice vinegar 0.5g, cooking wine 5g, salt 0.5g
Condiments for fish cooking: chili bean sauce 15g, sugar 1g, salt 2g, boiling water
