700g / 24½oz Strong white bread flour
520g / 18½oz Cool water (try to use bottled or filtered)
1½ tsp Kosher salt or 1 tsp ordinary table salt
1½tsp Instant or active dried yeast or 15g of fresh yeast
80g / 3oz Grated mature cheddar cheese + 25g / 1oz for garnish
15g Fresh chives (optional)
