Chef Liang explains that every aspect of dim sum, from the texture of the shrimp in a siu mai to the flakiness of an egg tart, requires careful consideration.

“Perfect dim sum is about understanding the ingredients and respecting the process,” Chef Liang says. “Every dumpling tells a story.”

Innovation in Tradition

While tradition is crucial, modern dim sum chefs also bring innovation to their craft. Chef Liang has introduced new variations, such as truffle-infused xiao long bao (soup dumplings) and matcha custard buns, while still preserving the essence of classic flavors.

His philosophy? “The heart of dim sum remains the same—small bites, big flavors. But creativity allows us to take tradition to new heights.”

The Global Love for Dim Sum

From Guangzhou to New York and London, dim sum continues to gain popularity worldwide. Restaurants are experimenting with fusion flavors, and Michelin-starred establishments are elevating these bite-sized delights to gourmet levels. Yet, at its core, dim sum remains a symbol of togetherness, best enjoyed with family and friends over tea.
