冰皮月饼食谱和造型制作教学 Make Snow Skin Mooncake Without Using The Molds

用简单的工具做一份属于自己的造型冰皮月饼。冰皮月饼的制作简单,也不需要烤箱,特别适合炎热的天气。没有月饼模具的也可以试一试自己手捏造型。我的造型多数都是用家里随手可得的工具制作的,大家不妨试一试。

材料:
1) 糯米粉 – 55g
2) 粘米粉/再来米粉 – 50g
3) 澄面粉 – 25g
4) 鲜奶 – 235g
5) 糖粉 – 20g
6) 炼奶 – 30g
7) 食用油 – 26g
8) 绿豆馅 – 360g (30g X 12 份)
9) 天然色粉 – 适量
10) 糕粉 – 适量

*如何自制糕粉:把两汤匙的糯米粉放进不粘锅,干锅,小火炒到变轻,颜色微黄就可以。
*操作的时候用保鲜膜把冰皮盖着避免风干。
*可以做12个60-65g的月饼。

Ingredients:
1) Glutinous rice flour – 55g
2) Rice flour – 50g
3) Wheat Starch– 25g
4) Milk – 235g
5) Icing sugar – 20g
6) Condensed milk- 30g
7) Cooking oil – 26g
8) Mung Bean paste – 360g (30g X 12 portions)
9) Natural food colour
10) Cooked flour

*How to prepare cooked flour: Put 2 tbsp of glutinous rice flour in a nonstick pan, stir fry without oil over medium low heat until the flour turns light and slightly yellowish.
*Always cover with plastic wrap to prevent the dough from drying out.
*yield 12 mooncakes, 60-65g each.
