Cheese Balls

Cheese Balls is a starter that always tops the charts! It is a great hit with everybody, all thanks to the cheesy mouth-feel and peppy flavour. You need just common ingredients like flour, bread crumbs, cheese and flavour-givers like coriander and green chillies. A bit of tact is needed in shaping the balls – but once you get that right, your Cheese Balls will be a sureshot success. After dividing the mixture into equal portions, smoothen each portion and then shape it into a ball to avoid cracks from forming. Also, make sure you do the steps one after the other without a long gap, because when the mixture is kept out for a long time, it dries up.

Preparation Time: 10 minutes.
Cooking Time: 15 minutes.
Makes 35 balls.

1½ cups grated processed cheese
¾ cup fresh bread crumbs
2 ½ tbsp cornflour
1 tbsp plain flour (maida)
2 tsp finely chopped green chillies
1 tbsp finely chopped coriander (dhania)
Salt and freshly ground black pepper (kalimirch) to taste
Oil for Deep-frying

For serving
Chilli sauce

1. Combine all the ingredients in a deep bowl along with approx. 2 tbsp of water and mix very well.
2. Divide the mixture into 35 equal portions and shape each portion into a ball.
3. Heat the oil and deep-fry a few balls at time on a medium flame till they turn golden brown in colour from all the sides. Drain on an absorbent paper.
Serve immediately with chilli sauce.
