你有没有过把土豆切开放到锅里直接煎。煎很长时间不说,而且煎出来土豆外面变的很硬,而里面却是不熟的状态。其实煎土豆(roasted potatoes)是有技巧的。只要多出一个步骤,就可以做到外皮是酥脆,而内心是软绵的口感。
材料:
两个大的黑皮土豆
蔬菜油 12克 1大勺
鸭油 8克 2 小勺
盐 2 克 1/4小勺

vegetable oil 12g 1 tablespoon
duck fat 8g 2 teaspoons
salt 2 g 1/4 teaspoon
