GRILLED SWEET POTATOES RECIPE with Hemp Seed and Almond Pesto

This grilled sweet potatoes recipe with hemp seed and almond pesto treats the sweet potato the way it deserves to be treated. Just because it's called a potato doesn't mean that you can only eat it baked or as fries or as chips (but I'll mess with a sweet potato fry). We're grilling it for some extra charred flavor, but you can roast it in the oven too. Then we're adding a hemp seed pesto with nutritional yeast. It's accidentally vegan, but it's purposefully delicious. Give it a try.

FOR THIS RECIPE YOU WILL NEED
2lb Sweet Potato
150g or 2C. EVOO
35g or 1/4C. Hemp Seed
35g or 1/4C. Nurtitonal Yeast
35g or 2C. Baasil
30g. or 1.5C. Parsley
1/2 SHALLOT IN PESTO (this was in beginning but not middle of video)
40g or 1/2C. Slivered Almond
1 tsp. SALT
1 Lemon, Juiced
salt for boiling potato and seasoning after they come off grill
FOR THE POTATOES
1. Cut the sweet potatoes into large edges about 2x the size of a steak fry
2. In a large dutch oven, bring the potatoes to a simmer and cook until they are almost fully tender 15-20 mins. Taste they should be juts past al delta but not falling apart
3. Light 1 full chimney starers worth of charcoal and bring grill to medium high heat
4. Once potatoes are cooked, take out of water with slotted spoons and cool to room temp
5. Lay on Grill in batched charring outside and crisping as well
6. Transfer to Large bowl when well colored, season with lemon, salt, and evoo to taste. Should taste great on its own.
7. Serve Garnishing liberally with pesto, hemp seeds, almonds, herbs
FOR THE PESTO
1. In a medium saute pan, toast almonds until lightly golden and fragrant, chill before using in pesto
2. In food processor, starting with EVOO load everything in along with shallot, basil, parsley, hemp seed, lemon, nutritional yeast, salt and almonds. Reserve about 1/3rd the evoo and half the seeds for mixing in after the FP.
3. Pulse until well broken down and stir in EVOO and HEMP SEEDS you set aside. Taste for seasoning, serve
