免烤青柠乳酪塔(无鲜奶油)Lime Cheese Tart Without Whipping Cream

这应该是史上最容易操作的免烤乳酪馅,材料加一加拌均就好,配方不用鲜奶油,所以连打发鲜奶油的功夫都省了。青柠乳酪的口感浓郁顺滑,跟酥松的塔皮非常搭配。不想烤塔皮的话,可以用消化饼干或玛丽饼,碾碎后加入融化牛油拌均就可以。饼干和牛油的比例是2:1.

塔皮材料:
1)牛油 - 120g
2)低筋面粉 - 240g
3)糖粉 - 80g
4)杏仁粉 - 25g
5)鸡蛋 - 1(A 蛋)

*我用六寸的乳酪蛋糕模。
*制作过程如果塔皮变软可以冷藏变硬后再操作。
*只用了2/3的面团做塔皮。剩下的面团可以做成饼干,或用玛芬模做成小小的塔皮。我用玛芬模把剩余的面团做成7个塔皮。
*想把塔做成跟乳酪蛋糕模同等的高度的,可以把做周围的塔皮擀成比模稍微高少许的面团就可以,多余的面团用刀沿着模的边缘切除。青柠乳酪馅的部分需要全部✖️2。
*不想烤塔皮的话,可以用消化饼干或玛丽饼,碾碎后加入融化牛油拌均就可以。饼干和牛油的比例是2:1.

青柠乳酪馅材料:
1) 奶油奶酪 - 150g
2) 青柠皮屑 - 1 tsp
3) 青柠汁 - 30 ml
4) 炼乳 - 150g
5) 吉利丁粉 - 1 tsp
6) 水 - 2 tsp

*这个免考青柠乳酪蛋糕只需要少量的吉利丁就可以凝固定型。
*我用青柠和挤了一些双色的鲜奶油做装饰。颜色是天然色粉,我加少许蓝色和黄色调成有点薄荷的颜色。

Ingredients for Tart Crust:
1)Butter- 120g
2)Cake flour - 240g
3)Icing sugar - 80g
4)Almond powder- 25g
5)Egg - 1 (Grade A)

*Always chill the dough for easy handling if the dough becomes soft while making the tart.
*I used 2/3 of the dough to make tart. You can use remaining dough to make cookies or smaller tart using muffin pan.
*You can always make your no bake crust using digestive biscuit and melted butter. Crush the biscuit until it resembles breadcrumbs, add in melted butter and mix well. Pour the mixture into removable pan and press firmly. The ratio for biscuit and melted butter is 2:1.

Ingredients for filling:
1) Cream cheese - 150g
2) Lime zest - 1 tsp
3) LIme juice - 30 ml
4) Condensed milk - 150g
5) Gelatin powder - 1 tsp
6) water - 2 tsp

Instructions for filling:
1) Soften cream cheese to room temperature. Put cream cheese, condensed milk, lime zest and lime juice into a mixing bowl. Beat all the ingredients together. The batter will looks chunky at first, that's normal. Continue beating until it gets creamy. Set aside.
2) Sprinkle gelatin powder evenly on top of the water. Let it sit for few mins until it absorbs the water and swell in size. Place the bowl with gelatin mixture over a bigger bowl filled with hot water. Stir the gelatin mixture until it becomes clear. Remove from hot water and set aside to cool.
5) Pour gelatin mixture into cheesecake batter and mix until well combined.
6) Pour cheesecake batter into pre-baked crust, gently shake to the tart to flatten the surface. Refrigerate until the filling is set.

*This cheesecake only requires small amount of gelatin to set.
*Use nature food color powder for whipped cream.
