Butter Chicken merupakan salah satu kari paling populer di restoran India. Ciri khas masakan ini banyak memakai bumbu rempah-rempah. Potongan ayam yang dimarinasi ditambah saus kari krim yang kental membuat Butter Chicken semakin lezat. Salah satu menu yang wajib dicoba!
Resep Butter Chicken
Bahan marinasi:
400 gr ayam paha fillet, potong 2-3 cm
2 siung bawang putih, parut
80 ml santan
2 cm jahe, parut
1 sdt paprika bubuk
2 sdt kunyit bubuk
1 sdt garam
½ sdt lada
Bahan kuah:
3 sdm ghee / clarified butter
1 buah bawang bombai
1 buah tomat
2 siung bawang putih
2 cm jahe
3 sdm pasta tomat
100 ml santan
300 ml air
1/2 sdt ketumbar
1/2 sdt jinten
1/2 sdt kapulaga
1/4 sdt kayu manis
1/4 sdt pala
2 cengkih
1 bunga lawang
1 bay leaf / daun salam
1/4 sdt fenugreek
Garam, gula, penyedap sesuai selera
Langkah:
1. Campurkan ayam dengan bahan marinasi dan diamkan minimal 15 menit
2. Pan seared ayam yang sudah dimarinasi dengan api besar hingga ½ matang. Sisihkan
3. Gunakan pan yang sama. Tumis bawang bombai, bawang putih geprek, dan jahe parut
4. Masukkan ghee / clarified butter
5. Setelah agak layu masukkan tomat
6. Tambahkan ketumbar, kapulaga, jinten, fenugreek, pala, dan kayu manis
7. Tumis hingga layu, lalu tambahkan air dan pasta tomat. Masak hingga mendidih
6. Blender bumbu yang sudah dimasak. Setelah halus, masak kembali
7. Masukkan ayam
8. Masukkan daun salam, bunga lawang, dan cengkih
9. Bumbui dengan garam dan gula
10. Masukkan santan sedikit demi sedikit. Masak hingga kuah mengental dan ayam matang

Indian Signature Dish: Butter Chicken Curry a la Restaurant Recipe
Butter Chicken is one of the most popular curries in Indian restaurants. The characteristic of this dish is the many spices it uses. Marinated chicken chunks plus creamy curry sauce make Butter Chicken even more delicious. This is really a must-try!
Butter Chicken Recipe
Marinade ingredients:
400 g chicken thigh fillet, cut to about an inch
2 clove garlic, grated
80 ml coconut milk
1 inch ginger, grated
1 tsp paprika
1 tsp turmeric powder
1 tsp salt
1/2 tsp pepper
Sauce ingredients:
3 tbsp Ghee / clarified butter
1 pc onion
1 pc tomato
2 clove garlic
1 inch ginger
3 tbsp tomato paste
100 ml coconut milk
300 ml water
1/2 tsp coriander
1/2 tsp cumin
1/2 tsp cardamom
1/4 tsp cinnamon
1/4 tsp nutmeg
2 cloves
1 star anise
1 bay leaf
1/4 tsp fenugreek
Salt, sugar, flavor enhancers to taste
Steps:
1. Combine the chicken with the marinade and let it rest for at least 15 minutes.
2. Pan-sear the marinated chicken on high heat until half cooked. Set aside.
3. In the same pan, sauté the onion, pounded garlic, and grated ginger.
4. Add the Ghee / clarified butter.
5. After they wilt, add in the tomato.
6. Add the coriander, cardamom, cumin, fenugreek, nutmeg, and cinnamon.
7. Sauté until everything wilts, then add the water and tomato paste in. Bring to a boil.
8. Blend the sautéed spices. After blending, cook the spice mix once more.
9. Add the chicken.
10. Add the bay leaf, star anise, and cloves.
11. Season with salt and sugar.
12. Add the coconut milk bit by bit. Cook until the sauce thickens and the chicken is well-cooked.
11. Butter Chicken is ready to serve.
