Hello, I'm Emojoie.
I made a cake using seasonal figs this time.
Baked Almond cake with fig jam, put mascarpone cream and plenty of ripe figs on the top.
Figs are less sweet than cakes, so I added syrup of honey and lemon juice to balance the sweetness and sourness. Figs go very well with honey, so I also put them in the almond cake.

◼Cake18cm x 18cm
150g figs
50g sugar
70g flour
70g almond flour
5g baking powder
120g egg white
40g honey
Vanilla
100g melted unsalted butter
-Bake at 190℃ for 30 - 35 minutes

◼Mascarpone cream
250g mascarpone
100g whipping cream
40g sugar

➢Cake
Put ripe figs and sugar in a pot to make jam. Boil down well.
Put flour, almond flour and baking powder in a bowl and mix with a whipper.
Add egg whites, honey, vanilla and melted butter and mix.
Add fig jam.
Spread the butter on the mold, pour the dough, and bake in a preheated oven to 190°C for 30 - 35 minutes.

➢Mascarpone cream
Add mascarpone, cream, and sugar, then whip them together.
Please be careful not to overwhip. Otherwise, the cream will harden.

➢Finishing
Put the cream on the cake from the mold.
Cut the figs and put them on top of the cake.
Figs are less sweet than cakes, so if you put mixed honey and lemon juice on the figs, the taste will be well balanced and you can enjoy it.
