The basics of desi khana begins with learning the skill of making the perfect dal. Here’s the comforting Moong Dal recipe for you to make in your home kitchen.

HOMESTYLE MOONG DAL

Ingredients

1 cup split skinless green gram (moong dal)
2 tbsps oil
1 tsp cumin seeds
5-6 curry leaves
2 dried red chillies
¼ tsp asafoetida (hing)
1½ tbsps finely chopped garlic
1 medium onion, chopped
1 medium tomato, chopped
¼ tsp turmeric powder
½ tsp red chilli powder
Salt to taste
2 tbsps chopped fresh coriander leaves
Ghee to serve
Fresh coriander sprig for garnish

Method

1. Wash split skinless green gram with sufficient water for 2-3 times, add fresh water and soak for 20 minutes.
2. To make homestyle moong dal, heat oil in a pressure cooker, add cumin seeds and let them change colour.
3. Add curry leaves, dried red chillies and asafoetida and sauté for 30 seconds. Add garlic and sauté for 30 seconds.
4. Add onion and sauté for 1 minute. Add tomatoand sauté for 1 minute.Add turmeric powder, and red chilli powder, and mix well.
5. Drain the soaked moong dal and add into the cooker. Mix well. Add salt and 3 cups water and mix well. Cover and cook under pressure till 2 whistles are given out.
6. Open the cooker once the pressure has reduced completely, add coriander leaves and mix. Take the cooker off the heat.
7. Pour the dal into a serving bowl, drizzle ghee and garnish with coriander sprig. Serve hot.
