Chinses Traditional Mooncake Recipe
Ingredients 配方:
1. Invert syrup 转化糖浆:
cold water 200 ml凉水200毫升
Granulated Sugar 250 g 白糖250克
Dough ( 12 pieces Crust , 30 g/each)面团(12个皮,30克/个):
All purpose or bread flour 140 g (1 cup ) 中筋面粉或面包粉140克
syrup 100 g (70 ml) 糖浆 100克 (70毫升)
Vegetable or canola oil 40 ml 炒菜油40毫升
Baking soda 1.5 g (1/4 tsp) 苏打粉 1.5克
cold water 5 ml(1 tsp) 凉水5毫升
Moon cake Filling (12 pieces 30 g/each)月饼馅(12个馅料,30克/个):
peanut 18 g 花生米18克
Almonds 18 g 杏仁18克
cashew 18 g 腰果18克
pecan 12 g 碧根果12克
walnut 13 g 核桃仁13克
Pine nuts 5 g松子仁5克
pumpkin seed 10 g 南瓜籽10克
sunflower seeds 10 g 葵花籽10克
black sesame seeds 3 g 黑芝麻3克
white sesame seeds 7 g 白芝麻7克
raisin 15 g 葡萄干 15克
dried cranberry 15 g 蔓越莓干 15克
dried mango 15 g 芒果干15克
dried Pineapple 15 g 菠萝干 15克
Glutinous rice flour 80 g炒熟的糯米粉80克
Granulated Sugar 40 g (3 tbsp) 白糖40克
Vegetable or canola oil 35 ml 熟的炒菜油35毫升
Invert syrup 20 g 转化糖浆20克
cold water 45 ml(can be adjusted) 凉水45毫升(可调整)
salt 3 g (1/2 tsp) 盐3克
Egg yolk wash:
Egg yolk: 1
Water: 10 ml (2 tsp)
蛋黄液: 蛋黄:一个 水:10毫升
Oven temperatures:
For baking nuts:
Start with cold oven. 275°F /135°C bake for 12-15 minutes. The actual time depends how fast your oven can reach the desired temperature.
For baking Mooncakes:
Preheated oven. 356°F/180°C bake for 5 minutes.
Take the tray out and brush egg yolk wash. At the same time open the oven door to cool the oven a bit.
Then 300°F/150°C bake for another 5 minutes. Brush the second layer of egg yolk wash.
Finally 300°F/150° bake for 5-10 minutes till they are golden brown. After cooled, sealed them in a container for 2-3 days to soften the crust.
烤箱温度:
烤坚果温度和时间: 不需要预热烤箱。
275°F /135°C 烤12-15分钟。具体时间的长短,要取决你烤箱预热的快慢。
烤月饼的温度和时间:
预热好的烤箱:356°F/180°C 烤五分钟 拿出来刷第一次蛋黄液。同时打开烤箱门散热 300°F/150°C 烤五分钟 拿出来刷第二次蛋液。 300°F/150°C 最后烤5-10钟至完全上色。 放凉后,放到密封的容器里回油2-3天。
