OKKK this recipe is 4 servings as a main but it was so good I ate the whole thing. I didn’t have mushroom left in my stomach after trying this.

From Claire Saffitz’s Dessert Person, I decided to go the savoury route make a two-in-one Level 2 recipe - the Crispy Mushroom Galette with Flaky Olive Oil Dough. The base of this galette consists of melty, caramelized leeks, garlicky rosemary mushrooms and crispy Panko breadcrumbs. Oh, did I mention that this recipe is VEGAN?

This recipe has simple ingredients and requires no special tools, just some patience! I promise you it’s well worth it.
