Earlier in the year, I showed you how to make Korean potato pancakes (Gamjajeon). But after tasting my mom's (new) version, I wanted to share her recipe. Her pancakes were much lighter and fluffier. Loved it! I think the addition of onion and jalapeno give the potato mix the perfect amount of flavor.
