Serves: 10 Melon Pans

Ingredients:

Bread Dough

225 g (1 ¾ cup) bread flour and extra for sprinkling
25 g (scant ¼ cup) cake flour (No cake flour? See Note)
3 g (1 tsp.) kosher salt
40 g (3 Tbsp.) granulated sugar
4 g (1 ¼ tsp.) instant dry yeast (Are you using active dry yeast? See Note)
1 large egg (46-50 g/ml), beaten
50 ml (3 ½ Tbsp.) whole milk, keep at 86F (30C) (See Note)
50 ml (3 ½ Tbsp.) water, keep at 86F (30C)
35 g (2 ½ Tbsp.) unsalted butter, cut into small cubes and at room temp

Biscuit Dough

60 g (About 4 Tbsp.) unsalted butter, at room temp
100 g (½ cup) granulated sugar
1 large egg (46-50 g/ml), beaten
200 g (1 ½ cup + 2 Tbsp.) cake flour (No cake flour? See Note)
2 g (½ tsp.) baking powder

Toppings

2 Tbsp. granulated sugar
