My life is filled with so much beauty and love, but this week was challenging. I show the bits of my life when I can, but the bits I didn’t show.... working 5 days this week & then coming home to work on the house.
It rained all week and my wood got wet and warped. It made the paneling on the ceiling extra difficult. Sometimes I think “maybe I can’t do this”
But I have such a strong intention for the life i would like to live, and the way i want to treat this beautiful earth we all share... This intention keeps me going.
Im Grateful for my parents..they’ll come for a visit when I’m struggling.
And my friends. I’ve never really had friends before this year. It’s pretty amazing. I feel grateful to have friends.
Recipe for very simple pumpkin bread
1 small/ medium pumpkin (I used a variety called red kuri squash)
15 dates
3 cups oats
1 TBSP vanilla extract
2 tsp cinnamon
1 tsp cardamom
1 tsp salt
Grind your oats in blender to create a flour. Place oats in a bowl with the spices
Chop your pumpkin and steam for 15-20 minutes until very soft.
Blend steamed pumpkin with dates. Add pumpkin/ date purée to oats.
Stir to combine. Pour into a baking tray and cook for 35-40 minutes at 350.
Cream:
1.5 cup cashews
1 cup homemade coconut milk
3 TBSP coconut sugar
Vanilla
Put all ingredients in a blender and blend until creamy. Add coconut milk during blending if it’s too thick. You want it to be thick though so don’t add too much!!!
