लहसुनी तवा मसाला | Lehsuni Tawa Masala | Sanjeev Kapoor Khazana
The hero of this unique gravy recipe is deep fried crisp garlic cloves combined with a luscious, rich and flavourful gravy made with easily available ingredients!
LEHSUNI TAWA MASALA
Ingredients
1½ cups garlic cloves (lehsun)
3 tbsps oil + for deep frying
1½ tsps cumin seeds
2 medium onions, chopped
Salt to taste
2-3 green chillies, chopped
2 medium tomatoes, chopped
¼ tsp turmeric powder
1 tsp red chilli powder
2 tsps coriander powder
½ tsp garam masala powder
¼ cup yogurt
2-3 tbsps chopped fresh coriander leaves
½ lemon
Fresh coriander sprig for garnish
Paranthas for serving
Method
1. Heat sufficient oil in a kadai. Add the garlic cloves and deep fry till golden brown. Drain on absorbent paper and set aside.
2. Heat 3 tbsps oil on a tawa. Add cumin seeds and once they start to change the colour, add onions, salt and sauté till golden brown.
3. Add green chillies, tomatoes and cook till the tomatoes are pulpy.
4. Add turmeric powder, red chilli powder, coriander powder, garam masala powder and mix well.
5. Add yogurt and sauté for 2 minutes. Add 1 cup water and mix well.
6. Add fried garlic cloves, coriander leaves and mix well. Squeeze lemon and mix well.
7. Transfer on a serving plate, garnish with coriander sprig and serve hot with paranthas.
