WARASUBO IN SAGA

🐟 WARASUBO SASHIMI: Clean and carefully debone the warasubo. Put the fish head and the bones in a dish. Add slices of lime under the fish head. Add shredded radish on the dish and serve the fish with a bowl of soy sauce + yuzu (hot pepper paste) and a bowl of magani-yuke (crab salt paste).
🐟 GRILLED DRIED WARASUBO: Use a hammer to soften the dried warasubo. Grill on an oven for 20 seconds. Finally, cut the fish into small pieces and serve with magani-yuke.
🐟 WARASUBO SHUMAI: Filling: Clean and wash the warasubo. Dehead the fish and put everything (fish heads and bodies) in a steamer for 10 minutes. Leave the heads aside. Take the meat out of the fish bodies and cut into slices. Add sake, soy sauce and sugar.
Second, stuff the filling in dumpling dough paper and shape it into shumai. Apply a bit potato starch on top. Third, add shumai in a hot pan with cooking oil and fry for 20 seconds. Add warasubo head on each of shumai pieces. Pour water into the pan and steam for another 10 minutes. Finally, put the shumai in a dish with watercress and serve.
