[INDONESIAN]
Resep Café de Paris Steak (untuk 2-4 porsi)

Bahan:
Daging steak tenderloin

Bahan butter:
200 gr mentega, suhu ruang
½ sdt garam
½ sdt lada hitam
1 sdt gula
8-12 batang parsley (kalau ada yang flat-leaf parsley)
1 batang rosemary, cincang halus
1 batang daun bawang cung, cincang halus
2 siung bawang merah, cincang halus
8 siung bawang putih ukuran besar, haluskan
½ sdm mustard
Lemon utuh, ambil sedikit kulit
1 sdm air perasan lemon
10 gr anchovies
½ sdt paprika bubuk
½ sdt kari bubuk

Bahan lainnya:
1 buah kentang ukuran jumbo
2 sdt garam
1 sdm cuka
100 ml cream
Selada air hijau

Langkah:
1. Untuk kentang, potong tipis kentang ukuran 3-4 mm, bilas, kemudian rendam dengan air dan cuka minimal 30 menit, bilas hingga dua kali, keringkan
2. Panaskan minyak, lalu goreng kentang di api kecil selama 15 menit, tiriskan kemudian goreng kembali di api besar hingga matang, tiriskan
3. Untuk café de paris butter, siapkan mangkuk, masukkan bawang putih yang telah dihaluskan, bawang merah, parutan lemon, rosemary, parsley, daun bawang, perasan lemon, anchovies, kari bubuk, paprika bubuk, dan mustard kemudian aduk
4. Tambahkan garam, lada hitam dan gula, aduk kembali hingga menyatu, diamkan 2 menit lalu tambahkan mentega, aduk
5. Pindahkan ke dalam plastic wrap kemudian gulung memanjang, diamkan di dalam kulkas atau freezer
6. Keluarkan dari kulkas kemudian potong-potong, untuk saus panaskan wajan, masukkan sedikit mentega yang telah dipotong lalu tambahkan cream, aduk rata
7. Untuk steak, keringkan dengan tisu lalu bumbui dengan garam, lada hitam, dan sedikit minyak sesuai selera

Café de Paris Steak Recipe (yield 2-4 servings)

Ingredients:
Tenderloin steak

Butter ingredients:
200 g butter, room temperature
½ tsp salt
½ tsp black pepper
1 tsp sugar
8 pc parsley, finely chopped
1 sprig rosemary, finely chopped
1 pc spring onion, finely chopped
2 pc shallot, finely chopped
8 pc garlic, large, minced
½ tbsp mustard
Whole lemon, zest
1 tbsp lemon juice
10 g anchovies
½ tsp paprika powder
½ tsp curry powder

Other ingredients:
1 pc potato, jumbo size
2 tsp salt
1 tbsp vinegar
100 ml cream
Watercress

Steps:
1. For the Fries, slice the potato thinly to 3-4 mm, rinse, and soak in water and vinegar for at least 30 minutes. Rinse twice and pat dry.
2. Heat some oil. Fry the potato on low heat for 15 minutes and set aside. Fry it again on high heat until cooked. Set aside.
3. For the Café de Paris butter, prepare a bowl and add minced garlic, shallots, lemon zest, rosemary, parsley, spring onions, lemon juice, anchovies, curry powder, paprika powder, and mustard. Mix.
4. Add salt, black pepper, and sugar. Mix well and rest for 2 minutes. Add the butter in and stir.
5. Transfer onto a plastic wrap and roll to a cylinder. Chill in the fridge or freezer.
6. Get the butter out of the fridge and slice. To make the sauce, heat the pan and add some of the sliced butter in and the cream. Mix well.
7. For the steak, pat it dry with a paper towel. Season with salt, black pepper, and oil, to taste.
8. Grill the steak with Tefal OptiGrill+ to medium well. For the second steak, cook it to rare or to taste.
9. Café de Paris Steak is ready to serve.
