Tomato Upma

This is a quick and easy breakfast, with an appetizing aroma and the tangy flavour of tomatoes. The Tomato Upma is made with everyday ingredients and is absolutely no-fuss. Yet, it tastes so awesome because of the traditional tempering and the characteristic flavour of tomatoes.

Preparation Time: 10 minutes.
Cooking Time: 11 minutes.
Serves 4.

¾ cup roughly chopped tomatoes
1 cup semolina (rava / sooji)
2 tbsp oil
1 tsp mustard seeds (rai / sarson)
1 tsp urad dal (split black lentils)
4 curry leaves (kadi patta)
½ cup finely chopped onions
1 tsp chilli powder
1 tsp sugar
Salt to taste
2 tbsp finely chopped coriander (dhania)

1. Combine the tomatoes in a mixer and blend to a smooth pulp. Keep aside.
2. Heat the oil in a deep non-stick pan, add the mustard seeds, urad dal and curry leaves and sauté on a medium flame for 30 seconds.
3. Add the onions and sauté on medium flame for 2 minutes.
4. Add the semolina and sauté on a medium flame for 4 minutes.
5. Add the tomato pulp, chilli powder, sugar, salt and coriander, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously.
6. Add 3 cups of hot water, mix well and cover with a lid and cook on a medium flame for 2 minutes, while stirring occasionally.
Serve immediately.
