RECIPE

▼材料 Ingredients
7cm x 2 cm mold X 10

麵團 Dough :
Unsalted butter 無鹽牛油(奶油) 90g
Icing Sugar 糖粉 40g
Egg 雞蛋 12g
Evaporated milk/ Milk 淡奶/鮮奶 8g
Cake flour 低筋麵粉 110g
Corn Starch 栗粉 (玉米澱粉) 60g

蛋漿 Egg mixture:
Egg 雞蛋 160g
Sugar 砂糖 80g
Evaporated milk/ Milk 淡奶/鮮奶 50g
Water 清水 200g

▼步驟 Instructions

1. 加入已軟化的室溫牛油、加入糖粉後,打發至至淡白色
2. 加入雞蛋、牛奶,加入過篩低筋麵粉及粟粉,壓成麵團,冷藏30分鐘
3. 預備蛋漿,加入雞蛋、砂糖、牛奶、清水,過篩後,冷藏30分鐘
4. 取出麵團,每個撻皮約30克,倒入蛋漿,
5. 230°C / 446°F 13-15 Mins
