This dessert was mangonificent. Yes, I know that's not a word but it's completely related to this video.

I attempted a Level 2 recipe from Claire Saffitz's Dessert Person cookbook - the Rice Pudding Cake with Mango Caramel. It was easy and well worth it! The rice pudding cake was rich and indulgent with notes of vanilla and cardamom, the mango caramel was sweet and almost bitter in a pleasant way and then garnished with refreshing pieces of fresh mango. I enjoyed this recipe because of the tropical flavours it promoted - I felt like I was on an island far, far away (when in reality I'm stuck in another quarantine).
