Resep Ayam Pedas Kemangi (untuk 4-5 porsi)

Bahan marinasi:
1 kg ayam negeri, potong 12
1 buah jeruk nipis
1 sdt garam

Bahan lainnya:
2 batang serai, geprek
3 lembar daun salam
7 lembar daun jeruk
2 batang daun bawang, potong
1 buah tomat, potong
10-15 buah cabai rawit merah
50 gr daun kemangi
1 jempol jahe, geprek
⅓ sdt garam
1 ½ sdm gula pasir
½ sdm kaldu bubuk
600 ml air

Bahan bumbu halus:
5 siung bawang putih
8 siung bawang merah
5 butir kemiri
1 jempol kunyit
10-15 buah cabai rawit merah
2 jempol kencur
Minyak secukupnya

Langkah:
1. Marinasi ayam dengan perasan jeruk nipis dan garam, aduk rata lalu diamkan beberapa saat
2. Geprek kemiri, potong bawang putih, bawang merah, kunyit, dan kencur lalu masukkan ke dalam blender
3. Masukkan cabai rawit dan sedikit minyak, blender hingga halus lalu tumis hingga minyak keluar
4. Masukkan serai, jahe, daun salam, dan daun jeruk, masak hingga wangi dan sedikit kecokelatan
5. Masukkan ayam, masak sesaat hingga sedikit kecokelatan kemudian tambahkan air
6. Tambahkan garam, gula, dan kaldu bubuk, aduk rata lalu ungkep selama 15-20 menit
7. Masukkan tomat, daun bawang, dan cabai rawit, aduk rata, masak sesaat
8. Masukkan daun kemangi, aduk rata lalu matikan api
9. Ayam kemangi pedas siap disajikan

Spicy Lemon Basil Chicken Recipe (yield 4-5 servings)

Marinade ingredients:
1 kg broiler, sliced into 12 pieces
1 pc lime
1 tsp salt

Other ingredients:
2 pc lemongrass, pounded
3 pc bay leaf
7 pc lime leaf
2 pc green onion, sliced
1 pc tomato, sliced
10-15 pc red Thai chili
50 g lemon basil
1 thumb ginger, pounded
⅓ tsp salt
1.5 tbsp sugar
½ tbsp stock powder
600 ml water

Blended Spices ingredients:
5 clove garlic
8 pc shallot
5 pc candlenut
1 thumb turmeric
10-15 pc red Thai chili
2 thumb aromatic ginger
Oil, as needed

Steps:
1. Marinate the chicken with lime juice and salt. Stir and marinate for a few moments.
2. Pound the candlenuts. Slice the garlic, shallot, turmeric, and aromatic ginger. Add into the blender.
3. Add Thai chili and some oil, then blend until smooth. Then, sauté until oily.
4. Add lemongrass, ginger, bay leaf, and lime leaf. Cook until fragrant and browned.
5. Add the chicken in. Cook for a moment until a bit browned, then add water.
6. Season with salt, sugar, and stock powder. Stir, then braise for 15-20 minutes.
7. Add tomato, green onions, and Thai chili. Stir and cook for a moment.
8. Add lemon basil. Stir well, then turn the heat off.
9. Spicy Lemon Basil Chicken is ready to serve.
