Sous vide is a cooking technique that means sealing food in a bag and then submerge in water. A restaurant might use sous vide, for example, to cook steaks to perfect and safe temperature, then they need only give steaks a quick pan-sear for that lovely caramelized color and flavor we all love. Home cooks are starting to use sous vide techniques, too; it's fun, it's interesting, and let's be honest -- it's a bit like a science experiment!
