Resep Sambal Udang Kecombrang (untuk 3-4 porsi)

Bahan:
400 gr udang utuh

Bahan bumbu rajang:
15-20 buah cabai keriting merah
10 buah cabai rawit merah
12 siung bawang merah
8 siung bawang putih
6 gr terasi bakar, haluskan

Bahan lainnya:
½ buah bawang bombai
1 buah bunga kecombrang
5 lembar daun jeruk
1 lembar daun salam
1 batang serai
1 sdm saus sambal
1 sdm saus tiram
1 buah tomat merah ukuran sedang
150 ml air
⅓ sdt garam
1 sdt gula pasir
½ sdt kaldu bubuk / penyedap
4 sdm minyak

Langkah:
1. Masukkan bawang putih, bawang merah, cabai keriting, cabai rawit, dan terasi ke dalam food processor, haluskan
2. Cincang bawang bombai, tomat merah, iris tipis kecombrang dan potong serai
3. Panaskan sedikit minyak tumis campuran cabai hingga setengah kering lalu masukkan daun jeruk, daun salam, serai, bawang bombai, dan kecombrang, aduk rata tumis hingga wangi
4. Masukkan tomat, aduk sesaat lalu tambahkan air, saus tiram dan saus sambal, aduk rata
5. Tambahkan garam, gula pasir, dan kaldu bubuk, masak di api sedang kecil hingga wangi, sisihkan
6. Potong bagian kepala udang yang tajam dan belah punggung udang
7. Panaskan minyak, goreng udang beberapa saat selama 2 menit lalu masukkan ke dalam tumisan sambal, aduk rata
8. Sambal udang kecombrang siap disajikan

Shrimp with Kecombrang Sambal Recipe (yield 3-4 servings)

Ingredients:
400 g whole shrimp

Sliced ingredients:
15-20 pc red curly chili
10 pc red Thai chili
12 pc shallot
8 clove garlic
6 g toasted shrimp paste, mashed

Others:
½ pc onion
1 pc kecombrang flower
5 pc kaffir lime leaf
1 pc bay leaf
1 pc lemongrass
1 tbsp chili sauce
1 tbsp oyster sauce
1 pc red tomato, medium
150 ml water
⅓ tsp salt
1 tsp sugar
½ tsp stock powder / MSG
4 tbsp oil

Steps:
1. Add garlic, shallots, curly chili, Thai chili, and shrimp paste to a food processor and blend.
2. Chop the onion and tomato. Slice the kecombrang thinly and slice the lemongrass.
3. Heat some oil. Stir-fry the chili mixture until half-cooked. Then, add lime leaf, bay leaf, lemongrass, onion, and kecombrang. Stir and cook until fragrant.
4. Add the tomato in. Stir for a moment, then add water, oyster sauce, and chili sauce. Stir well.
5. Add salt, sugar, and stock powder. Cook on medium-low heat until fragrant. Set aside.
6. Trim the sharp parts of the shrimp head and butterfly it.
7. Heat the oil. Fry the shrimp for about 2 minutes, then mix with the Sambal well.
9. Shrimp with Kecombrang Sambal is ready to serve.
