Resep Pepes Ayam Kemangi (4 porsi)
Bahan marinasi:
1 ekor ayam pejantan @600 gr potong 4 bagian
1 buah jeruk nipis
1 sdt garam
½ sdt merica
Bahan bumbu halus:
8 siung bawang putih
12 siung bawang merah
7 butir kemiri
8 buah cabai merah keriting
5 cm kunyit, iris
6 cm lengkuas, iris
Minyak
Bahan lainnya:
8 buah cabai rawit merah
4 lembar daun salam
2 batang serai, iris miring
1 buah tomat merah, potong
60 gr daun kemangi
2 batang daun bawang, potong
½ sdt garam
1 sdm gula
1 sdt kaldu bubuk / penyedap
Daun pisang untuk membungkus
Langkah:
1. Marinasi ayam dengan perasan jeruk nipis, garam dan merica, aduk rata, diamkan beberapa saat
2. Blender lengkuas, kunyit, kemiri, bawang putih, bawang merah, cabai rawit dengan sedikit minyak hingga halus
3. Tumis bumbu halus di api sedang hingga wangi dan sedikit kecokelatan, tambahkan sedikit minyak bila perlu lalu matikan api
4. Jika bumbu sudah dingin atau hangat, masukkan ayam, garam, gula dan kaldu bubuk, aduk rata
5. Masukkan daun bawang dan daun kemangi, aduk rata
6. Siapkan daun pisang, masukkan daun salam, serai, ayam beserta bumbu, cabai rawit dan tomat, lalu bungkus, sematkan tusuk gigi
7. Kukus selama 40 menit
8. Pepes ayam siap disajikan

Chicken Basil Pepes Recipe (yield 4 servings)
Marinating ingredients:
1 pc rooster @600 g, sliced into 4 pieces
1 pc lime
1 tsp salt
½ tsp pepper
Blended spices ingredients:
8 clove garlic
12 pc shallot
7 pc candlenut
8 pc red curly chili
5 cm turmeric, sliced
6 cm galangal, sliced
Oil
Other ingredients:
8 pc red Thai chili
4 pc bay leaf
2 pc lemongrass, sliced diagonally
1 pc red tomato, sliced
60 g lemon basil
2 pc green onion, sliced
½ tsp salt
1 tbsp sugar
1 tsp stock powder / flavor enhancer
Banana leaf to wrap
Steps:
1. Marinate the chicken with lime juice, salt, and pepper. Mix well and let it marinate.
2. Blend the galangal, turmeric, candlenuts, garlic, shallot, and chili with oil until smooth.
3. Sauté the blended spices on medium heat until brownish and fragrant. Add oil if needed, then turn the heat off.
4. Once the spices are warm or cooled down, add chicken, salt, sugar, and stock powder. Mix well.
5. Add green onions and lemon basil. Mix well.
6. Prepare the banana leaves. Add bay leaf, lemongrass, chicken with the spices, Thai chili, and tomato. Wrap and secure with a toothpick.
7. Steam for 40 minutes.
8. Chicken Pepes is ready to serve.
