Fresh air brushing our cheeks, autumn has come. When autumn arrives, there is something that pop up in our heads! That is Chuseok. It is a important day because it is the time to share our hearts that we were not able to do in a long time. As it is an important day, I have prepared a recipe full of devotion. Cooked rice with pine mushroom having a great scent, and some cool water Kimchi that you can enjoy with. Why donโt you sit at the table and have a friendly talk during Chuseok?

๐ฅ [Nabak-Kimchi (Watery Kimchi made of Sliced Radishes) Recipe] 10servings
- Ingredients : 400g Napa cabbage, 400g Radishes, 1 Cucumber, 2 Red pepper, 1/2 Pear, 50g Chives, 50g Minari(Water dropwort), 1tbsp Coarse salt, 1tbsp Red pepper powder
- Brine ingredients : 10 cups of Water (2L), 2tbsp Salt, 1tbsp Sugar
- Kimchi juice ingredients : 1/2 Onion, 1/2 Pear, 1/2 Apple, 2tbsp Minced garlic, 1/2tbsp Minced Ginger
1. Slice Napa cabbage, radish, cucumber, and pear in small rectangular sizes after they are washed. Take 2 red peppers, cut them in half to take out the seeds and slice them in thin strips.
Chives and water parsley should be washed and cut into sizes of 4 centimeters.
2.Have the Napa cabbage and radish in a bowl with thick salt for about 20 minutes, so that the stiffness dies.
3. Kimchi juice ingredients should be sliced into big sizes and stuffed into a small pouch and mix brine ingredients into a bowl and season it well.
(Tip. Based upon you taste you can use ยฝ of sweetener instead of sugar)
4. To make the Kimchi juice, put some chili powder into cotton pouch, put it into the saltwater bowl and squeeze until you get some color.
5. Add the Kimchi juice that you made into a Kimchi container and add the salted napa cabbage, radish, cucumber, pear, red pepper, chives, and minari(water dropwort).
(Tip. Based on you taste adjust the seasoning with salt)
6. Put it in the refrigerator after maturing it in room temperature for about a day.
๐ฅ [Matsutake Rice Recipe] 2~3servings
- Ingredients : 2 cups of Rice, 3 Matsutake, Shimeji mushrooms, 15 Ginkgo, 5 Chives, 2 cups of Kelp stock (400ml)
- Seasoning : 3tbsp Soy sauce, 1tbsp Cooking wine, 1tbsp Red pepper powder, 1/2tsp Minced garlic, 1tbsp Sesame oil, Sesame seeds
1. Wash rice and soak it for about 30 minutes and take the water out.
(Tip. Based upon you taste you can add some glutinous rice)
2. Wash out the dirt off the pine mushroom and tear it through its veining. Cut the root of the shimeji mushrooms and tear one by one. Slice small green onions and for the ginkgo nuts, stir it on a pan, place it on the kitchen towel and rub it until the skin peels.
Put seasoning soy sauce ingredients into a bowl, add sliced small green onions and mix.
3. Add soaked rice, mushroom, ginkgo nuts, and kelp broth into a pot. Close the lid and boil it in medium heat.
4. When rice water starts boiling, lower the heat and cook for about 15~20 minutes more. When you complete this, turn off the fire and let it rest for about another 5 more minutes.
Lay the sliced small green onion on the cooked rice, mix it carefully with the rice paddle and enjoy it with some soy sauce seasoning.
