Sous Vide KEY LIME PIE - Amazing Recipe from Abuela!
My amazing mother in law is a pie expert! She was kind enough to make this fantastic and beyond amazing key lime pie for us. She and I were very surprised with the results. The fact that sous vide made a better pie than she had been doing for years was shocking to all of us. This key lime pie is truly fantastic. Hope you enjoy this recipe.
HOW TO MAKE KEY LIME PIE SOUS VIDE
I cooked it for 1hr @ (180°F / 82.2°C)
* INGREDIENTS * I used for this sous vide cook.
BATTER INGREDIENTS
1 Can of Condensed Milk
4 Egg Yolks
1 oz. Key Lime Juice
1 Teaspoon Vanilla Extract
* someone said if you can't find key lime you can use this http://amzn.to/2lUvo48 but I have not tried that.
MERINGUE (White Part)
4 Egg White
3/4 Cup Granulated Sugar
1/4 oz. Key Lime Juice (2 drops)
* If you want you can pasteurize the raw egg @135°F / 57.2°C for 1hr. The egg will still be completely raw but 100% pasteurized.
