今天继续来做小时我最爱的年饼, 就是伦敦杏仁饼。不只华人农历新年,Raya和Deepavali都很常见的年饼,大人小孩都喜欢。新鲜杏仁做前暴烤到香味出来再使用。牛油饼干由牛油香,奶香和杏仁香组合而成。黑巧克力也使用好品质的56%Couvertur巧克力。一口咬下可尝到覆盖黑巧克力的浓厚苦甜味,牛油饼干的奶香酥,及里面藏着一整颗杏仁的香脆口感,可想而知中合起来的口味多好吃了,满满童年味道 。

收藏方式:覆盖好黑巧克力后,收密封容器放普通冰箱存留一个月。冷吃口感最佳。要新鲜7天内吃。
»想长期收室温的,可以换成dark compound chocolate免调温巧克力,没那么容易软,不过味道没那么好吃了😕

Today, continue to make my favorite CNY Cookies, which is London Almond Cookies. Not only on Lunar Chinese New Year, but these cookies are very commonly seen on Raya and Deepavali as well, loved by both adults and children. Fresh whole almonds are roasted until the aroma comes out before use. Butter cookies have combination of butter, milk and almond fragrance. 56% good quality Dark Couverture Chocolate are used for this recipe. In one bite, you can taste the rich bittersweet taste of coated dark chocolate, the creamy flakiness of butter cookies, and the crunchy texture of a whole almond hidden in it. Just imagine how delicious the combined taste is. Full of childhood nostalgic taste.

Storage Method: After coated with dark chocolate, put in airtight container and store in normal fridge up to one month. Best eaten cold from fridge. For freshest taste, eat within 7 days.

♦食谱=65块饼干 (7克/颗 面团)=
100克 (65颗) 杏仁 (预热烤箱180C: 7-8分钟)
125g 无盐牛油
60g 糖粉
1 蛋黄
2克 香草精
200克 低筋面粉
50克 杏仁粉
12克 奶粉
1克 盐
(预热烤箱180C: 15分钟)
(上下火,不开旋风,中层烤)

250克 黑巧克力
5克 植物油
少许 杏仁粒
(普通冰箱冷却15分钟至巧克力凝固再吃)

♦Recipe =60pcs Cookies=
=65pcs Cookies (7g/pcs dough)=
100g (65pcs) Almonds (Preheated Oven 180C: 7-8minutes)
125g Unsalted Butter
60g Icing Sugar
1 Egg Yolk
2g Vanilla Extract
200g Cake Flour/Low Protein Flour
50g Almond Flour
12g Milk Powder
1g Salt
(Preheated Oven 180C: 15minutes)
(Top Bottom Heat, No Fan Force, Middle Rack)

250g Dark Chocolate
5g Vegetable Oil
Handful Almond Nibs
(Chill in normal fridge for 15minutes till chocolate set before eating)
