Using the wild yeast of apples, the sugary fruit juice is first converted into alcohol and carbon dioxide. Under aerobic conditions, the acetic acid bacteria present in the fruit will oxidize the alcohol to produce vinegar, which is a qualitatively changed and vinegared wine. This is the method I accidentally discovered when I first started to learn winemaking, to catch acetic acid bacteria.
