酸菜炒米是一道有西北特色的炒米饭。它是用泡菜来炒的,所以口味比较特殊,吃起来酸酸辣辣比较过瘾。如何处理米饭呢?其实就比你平时蒸饭多了一个步骤。米饭蒸熟,打开盖子,趁热让米饭里的蒸汽散去。多余的水汽散出去,再经过冰箱隔夜冷藏,米粒不会粘在一起,而且一粒一粒散开的。这样的米饭你可以做蛋炒饭,酱油炒饭,海鲜炒饭或者酸菜炒饭。口味就由你定啦~

酸菜鸡蛋炒米饭食谱:

泡菜做法:
莲花白:半个和其他适合做泡菜的蔬菜
水:1300,或者按照瓶子的大小装满
盐:32克,(水的重量的2.5-3%)
室温发酵10-15 天

前一天米饭蒸熟之后,趁热让蒸汽散出去。然后盖盖,冰箱冷藏过夜。第二天米饭很容易就散开了。
剩米饭:适量
泡菜:适量
青椒:半个
红椒:半个
洋葱:1/4 个
蒜:三瓣
鸡蛋:2个
豆瓣酱:1/2 小勺
孜然粉:1/4 小勺
老抽:1/4 小勺
油:适量

How to make sauerkraut
Cabbage: 1/2
Water: 1300 g, or depends on your container
Salt: 32 g, (2.5-3% of water weight)
Ferment at the room temperature for 10-14 days

After the rice is cooked, stir the rice and open the lid to let excess steam come out. Then chill it in the refrigerator overnight.

One day old rice: as needed
sauerkraut: 1/2 cup
Green chili: 1/2
Red chili: 1/2
Onion: 1/4
Garlic: 3 cloves
Eggs: 3
Spicy bean paste: 1/2 tsp
Cumin: 1/4 tsp
Dark soy sauce: 1/4 tsp
Oil: as needed
