Fresh Tomato Pulp

Readymade tomato purée may contain flour, which is often used as a thickening agent. Make tomato purée at home to ensure it is contamination-free-all you need are tomatoes!

Preparation Time: 1 minute.
Cooking Time: 7 minutes.
Makes 1½ cups.

8 big tomatoes
Water for boiling tomatoes

1. Boil a vesselful of water in a deep pan.
2. Scoop out and discard the eyes of the tomatoes using the tip of a sharp knife.
3. Make a criss-cross cut at the base of each tomato.
4. Put them in boiling water for 3 to 4 minutes.
5. Remove and immerse them in cold water for some time.
6. When the tomatoes are cool, peel and discard the skin and seeds.
7. Chop roughly and blend in a mixer to a smooth pulp.
8. Use as required.

Handy tip: If frozen, fresh tomato pulp can last for months.
