Pineapple Chicken Adobo - Filipino
Pineapple Chicken Adobo is a version of the famous Filipino Chicken adobo. This recipe makes use of pineapple slices and juice. It somewhat resembles humba and chicken hamonado.
This dish is best when the chicken pieces are marinated for at least 6 hours so that the meat can absorb the marinade completely. This dish is best served with rice.
Here are the ingredients:
2 lbs. chicken, cut into serving pieces
1 (1 lb.) can pineapple chunks
6 tablespoons soy sauce
1 tablespoon brown sugar
2 tablespoons white vinegar
4 pieces dried bay leaves
1 teaspoon whole peppercorn
1 medium onion, minced
6 pieces garlic, crushed
3 tablespoons cooking oil
