用日式甜点 ’紫阳花和菓子‘ 的元素,做了这个紫阳花奶酪。这回做的是经典的意式奶酪,口感细腻顺滑,配上带q的果冻中和解腻,是一个整体味觉和视觉都能感受清爽的甜点。

~紫阳花由很多小花一簇簇的聚集在一起,犹如球状,所以也叫做绣球花。

果冻材料:
1)紫甘蓝 – 90g
2)水 – 450 ml
3)糖 – 70g
4)吉利丁粉 – 24g
5)水 – 170 ml (吉利丁)
6)柠檬汁 – 适量
7)泡打粉 – 适量

奶酪材料:
1)鲜奶 – 300g
2)吉利丁粉 – 9g
3)糖 – 70g
4)鲜奶油 – 300g

*我做5杯紫阳花奶酪,杯子的容量是250ml。
*糖的部分仅供参考,视自己的嗜甜程度自行增减。

Ingredients for Jelly
1)Red cabbage – 90g
2)Water- 450 ml
3)Sugar – 70g
4)Gelatin powder – 24g
5)Water – 170 ml (for gelatin)
6)Lemon juice – few drops
7)Baking powder – pinch

Ingredients for panna cotta:
1)Milk – 300g
2)Gelatin powder – 9g
3)Sugar- 70g
4)Whipping cream – 300g

*Make 5 hydrangea panna cotta. The size of the glasses is 250ml.
*The amount of sugar is for reference, you can adjust the sweetness accordingly.
