Kali ini aku akan berbagi resep cara membuat DESSERT MEWAH sekelas hotel berbintang, bermodalkan hanya KOPI SASET dan beberapa bahan ekonomis saja. Dalam bahasa Prancis, Mousse berarti busa. Sebuah sajian yang diproses sedemikian rupa hingga memiliki tekstur lembut berongga, diaduk dengan cara aduk lipat (folding), kemudian dicetak.

Resep Coffee Mousse

Bahan Pastry Cream (Vla):
5-6 sachet Tora Cafe Milky Latte
375 ml susu
1 butir telur
2 butir kuning telur
25 gr tepung maizena
40 gr butter / mentega
⅕ sdt garam

Bahan Italian Meringue:
2 butir putih telur
120 gr gula
40 ml air
Cream of tartar (opsional)

Bahan Biskuit:
1 pack egg drop cookies / biskuit lain sesuai selera
1 sachet Tora Cafe Choco Latte
Air secukupnya

Langkah :
1. Buat pastry cream, panaskan susu
2. Campurkan Tora Cafe Milky Latte, telur, dan tepung Maizena ke dalam wadah, aduk hingga semua tercampur rata
3. Masukkan sedikit demi sedikit susu yang sudah dipanaskan, sambil diaduk
4. Tuang ke panci lalu masak. Aduk terus hingga pastry cream mengental
5. Tambahkan mentega dan garam, aduk rata
6. Masukkan dalam wadah, tutup dengan baking paper / plastik. Diamkan hingga dingin
7. Buat italian meringue, panaskan air dan gula di suhu 118-121°C. Masak hingga menjadi sirup gula
8. Kocok putih telur, lalu tambahkan sirup gula sedikit demi sedikit sambil dikocok hingga kaku. Diamkan hingga dingin
9. Seduh Tora Cafe Choco Latte, lalu tuang ke wadah yang berisi egg drop cookies. Rendam hingga cokelat meresap ke dalam egg drop cookies
10. Campur meringue dengan pastry cream lalu aduk rata, sisakan sedikit meringue untuk topping
11. Masukkan ke dalam piping bag
12. Tata egg drop cookies yang sudah direndam di gelas / wadah
13. Tambahkan dengan adonan mousse
14. Lalu beri topping meringue di atasnya
15. Simpan di dalam lemari es atau bisa langsung disajikan

Five-Star Hotel's Dessert for Less Than a Dollar! Coffee Mousse Recipe No Whipped Cream.

This time, I'm sharing a recipe on how to make a 5-star hotel sumptuous dessert with only instant coffee and several other budget-friendly ingredients. In French, mousse means foam. This is a dish that has been meticulously processed so it has a soft, airy texture, mixed with a folding method, and then set.

Coffee Mousse Recipe

Pastry Cream (Vla) Ingredients:
5-6 sachets Tora Cafe Milky Latte
375 ml milk
1 egg
2 egg yolks
25 g cornstarch
40 g butter
1/5 tsp salt

Italian Meringue Ingredients:
2 egg whites
120 g sugar
40 ml water
Cream of tartar (optional)

Biscuit Ingredients:
1 pack Egg Drop cookies / other biscuits to your liking
1 sachet Tora Cafe Choco Latte
Water as needed

Steps:
1. Make pastry cream by first heating the milk.
2. Add Tora Cafe Milky Latte, eggs, and cornstarch into a bowl. Mix thoroughly.
3. Add the heated milk bit by bit while stirring
4. Pour to a pan and cook on heat. Keep stirring until the pastry cream thickens.
5. Add butter and salt. Mix well.
6. Transfer to a container. Cover with baking paper / plastic. Let cool.
7. To make the Italian meringue, heat some water and sugar at 118°C - 121°C. Cook until it becomes a sugar syrup.
8. Beat the egg whites and add the sugar syrup bit by bit as you beat them to a stiff peak. Let cool.
9. Make the Tora Cafe Choco Latte and pour to a container containing the Egg Drop cookies. Soak until the chocolate drink is absorbed well by the cookies.
10. Combine the meringue and the pastry cream. Mix well.
11. Leave a bit of the meringue for the topping. Place in a piping bag.
12. Arrange the soaked Egg Drop cookies in a glass or other container.
13. Add the mousse.
14. Top with meringue.
15. Keep in the fridge or serve.
