🥫 Focaccia? 🍕 Deep Crust Pizza? - Recipe - Glen & Friends Cooking Where does a focaccia recipe end and deep dish pizza recipe start?
Ingredients if using leftover yeast from previous bakes:
Leftover yeast ‘Poolish / Biga’ (1 cup flour + 1 cup water + yeast)
875 mL (3½ cups) all-purpose flour
10 mL (2 tsp) salt250 mL (1 cup) warm water
Olive oil
Ingredients if you have yeast:
1125 mL (4 ½ cups 675 g) all-purpose flour
10 mL (2 tsp) instant yeast
10 mL (2 tsp) salt
500 mL (2 cups) warm water
olive oil
Method:
Preheat oven to 450ºF
Combine all ingredients in a stand mixer with a dough hook and knead until a smooth dough is achieved.
Place in an oiled bowl, coat with oil, cover and let rise until double in bulk.
Punch down the dough, and transfer to an oiled 17x12” rimmed baking tray.
Press the dough out to stretch it out to cover the entire tray.
Coating the entire dough surface with oil.
Cover and let rise for 30-40 minutes.
Dimple with your fingers, then top with anything you like.
Bake for 20-25 minutes or until cooked.
