材料 Ingredients
八百克腩排 800g Spare ribs

醃料 Marinade
兩湯匙生抽 2tbsp Soy sauce
兩湯匙紹興酒 2tbsp Shaoxing wine/ Dry sherry
兩茶匙生粉 2tsp Potato flour

調味料 Condiments
一百二十毫升鎮江醋 120g Chinkiang vinegar
兩片月桂葉 2 Bay leaves
兩粒八角 2 Star anise
一湯匙生抽 1tbsp Soy sauce
一茶匙幼鹽 1tsp Table salt
七十克冰糖 70g Rock sugar
半茶匙黑椒碎 1/2 tsp ground pepper
六粒蒜頭 6 cloves of Garlic
兩片薑 2 slices of Ginger
五粒紅蔥頭 5 Shallots
半隻紅甜椒/指天椒 1/2 Sweet chilli/ bird's eye chilli
六百毫升清水 600ml Water
半茶匙麻油 1/2tsp Sesame oil
